The major problem I have with a vegan diet is that it doesn't really give you enough calories for the day, unless you make it up with grains and starches, which are much less healthy than meat. Most metabolic diseases are a consequence of excess sugars, grains and starch consumption, rather than meat.

If you really want to do keto, do a strict keto diet. I did lazy keto for the first 6 months (plus some long fasts here and there) and I was in and out of ketosis and it was horrible. Keto is IMHO an all-or-nothing regime. Persevere. You'll get there.

You can get fibre on keto from avocados, chia seeds, nuts, spinach, broccoli, linseeds, pumpkin seeds, sunflower seeds (in moderation). Meat has more nutrients, especially vitamins, than fruit and veggies.

You basically add all the food you would/should eat in one day and you eat it in a window of 1 hour or so. The added bonus is that it gives you the motivation and the discipline to avoid snacks that you would forget to count.

I have been doing it for more than 2 years. In my opinion, omad goes best with keto. I couldn't bear doing one meal a day with high carbs because I would be in and out of ketosis and that would give me mood swings. On the now defunct /r/omad subreddit, most users were on a high carb diet, but that never worked for me.

Just cutting a bit a sugar and carbs here and there is not really healthy. You'll be in and out of ketosis during the day and you'll have mood swings. You either adopt a truly ketogenic diet or better not cut carbs at all.

What worked for me: 1) ketogenic diet 2) intermittent fasting. Yes, it took me ages to get there, but now I only eat one a day without hunger or cravings.

Paradoxically, I've found that I can manage my diet better during the lockdown. All I do is shop for the essentials that I need and nothing else. I find it difficult to believe that you can't make calories up with keto, unless you're vegan. Just up your meat intake and you'll be ok.

@fdoosey, this is a common occurrence on keto when you are not fully fat adapted yet. It's called benign insulin resistance or something like that [edit: benevolent pseudo-diabetes].
