I think you have to do it when you can regularly fit it into your schedule so that it becomes part of your daily routine. I personally work out right after I get off work. It helps me to destress after a hard day. I have actually started looking forward to it every day.

I do my workouts after work. So I time a light afternoon snack for about 1 hour before. Usually I will have some yogurt with fresh fruit or granola. It keeps my blood sugar from dropping near the end of my workout or on my drive home.

I like to slice them, spray with a little olive oil cooking cpray and add cayenne pepper or creole seasoning, then broil them. A little sweet and spicey.

I'm a big fan of yogurt most of the light varieties are 100 calories or less and some of them even help with a sweet craving. I also like nature valley granola bars. 1 bar is 90 calories. I will usually pair one with a yogurt prior to my bigger workout after work.

Since your body is burning more as you gain more muscle, make sure your calorie count isn't too low. Your body will fight you if it thinks it is starving. Just keep excercising and take your measurements, I bet you'll like what you see better than what that evil scale is saying right now. Hang in there, and keep it up! :o)
