A big pepper salad!! Cut them all up into big chunky squares, toss in a little bit of greens of your choice, large-cubed cucumber, maybe a bit of feta if that's your thing, some Mrs. Dash or equivalent, and a little olive oil and balsamic vinegar... YUM!!!

I also use spaghetti squash instead of pasta noodles.... talk about delicious!!!! YUM!!!!! Cuts the calories into nothing, and still gives you the long stringy fun of spag noodles. You can eat a ton, and it hardly makes a dent in your day's calories... HUZZAH!

Throw some chopped mushrooms in a pan and cook them with a bit of water sprinkled on them... then add eggs and Mrs. Dash! TAADAA! Instant omelette. Of course, you can throw in any amount and variety of veggies along with it. Done in 7 mins or less!
