Once you get to a weight you are satisfied with will you have to keep juicing as a part of your regular intake or will you be able to cut it out all together and maintain your progress with solid foods as the main source?

Nope. Eating at a calorie surplus causes weight gain. If someone is eating at a deficit or maintenance time of day has no bearing.

After looking at your food diary I can truly understand why your doctor is concerned that you are developing an eating disorder. I can't get to 1200 calories a day how am I supposed to eat that much?!?! Five years ago I lost a gazillion pounds by sucking on cinnamon sticks all day because cinnamon revs up your metabolism. EEEWWWW!!!!!! I only use the regular PB2 in my protein shakes and Chocolate PB2 taste like a chemical bomb was set off in my mouth!! Oddly my kid likes it though. :noway:
