If you avoided every food that some crack pot on the internet warns you about, you'll never eat anything. If you have a medical condition that calls for you to avoid certain foods, then do so. Otherwise, ignore the crazies on the internet and just eat a varied diet appropriate to your weight loss/maintenance/gain goals.

Nope. I log a massive five to six thousand Calorie blowout and then bask in the awe of my friends at my prodigious capacity for eating delicious food. Then the next day I go back to my regular eating habits and continue to make steady progress toward whatever goal I happen to have set at the time.

Also, you'll find that progress is a hell of a drug. So whatever program you opt for, make sure there is some way to measure your progress. Before long you'll find the time between gym sessions drags on, and you're champing at the bit to get in there and set a new personal record.

No one can give you the motivation to go to them gym. In fact, there will always, and forever more be days that you have no motivation to workout. Motivation is worthless, because it presupposes that you only do the things you want to do. Discipline will get you where you need to be, because it means doing what must be done, when it must be done, whether you want to do it or not.

I looked more closely at your exercise diary, and I'd say your burns are roughly double what I'd expect to see for the exercise time logged. That is definitely where your issue is stemming from.

It's highly unlikely that your TDEE is 2800. The efficiency of the human body is surprising. Looking through your exercise diary I see things like logging 350 Calories for a 30 minute walk @ a 15 minute mile pace. Unless you weigh 400lb that is pure fiction. Get thee to a running store and have a proper shoe fitting. I suffered from knee issues when working out my entire life - until I was fit for a proper running shoe. Now it's plain sailing, at least until the shoes start to age.

Hot weather can be a lot more miserable than cold. I did an Olympic triathlon in 110°F heat and high humidity, people literally had their sprinklers pointing onto the road on the run course. I don't think I would have made it without them.

If you have a cheap no-contract gym near you, you'd probably be better off signing her up for that rather than buying a recumbent bike. They can be expensive for decently built ones, and unlikely worth the price unless it's something she can see herself doing long term even after the physio.
