That sounds TOO low carb. Even as a diabetic I eat more than 30 carbs a day. If your previous method of counting calories and macros was working, I think you should go back to it.

I have peanuts, almonds, and tofu right now which I am experimenting with. Almond flour is terribly expensive so maybe I would do better to grind up the almonds in a food processor than buying it in a bag.

Have you had abdominal surgery? I have. It changes the shape especially when you lose weight. In time the skin will probably tighten up somewhat. The doctor told me to expect it to take 2 years to tighten as much as it is going to.
