I just made these the other night and they were so good! I used nonfat plain greek yogurt instead of sour cream, cooked the fish with half the oil, and only used 1 corn tortilla instead of doubling them up. Yes! A low sodium V8 is only 30 calories and has lots of vitamins in a very convenient can. When I have a day trip or meetings out of my office, I'll add one to my bag of snacks for the car. Also when I haven't prepped a meal for work it's quick way to add a veggie.

I quit smoking cold turkey a few years back. My advice is to apologize to people at the beginning of every conversation! Really, I found myself very cranky at the beginning but found when I told people I was quitting smoking and was sorry if I was short or snappy with them, they were very supportive! You can do it!

My go to cheap and healthy meal is lentils and rice. Cook up the lentils with some carrots and onion and your choice of broth, serve over rice. Brown basmati goes well. Thanks everyone for sharing, I'm off to try the spinch/cranberry/almond salad!

Veggie Omlette - 1 or 2 eggs plus extra egg whites if you wish, Fill it up with sauted spinach, mushrooms, red pepper, onion and top with goat cheese. The goat cheese really makes it special!
