Your favorite vegetarian chili recipe?

So I need some tried and true vegetarian chili recipes. I made a lentil based one last night and it was good but it was more of a thick lentil soup vs chili. Probably would have been better if I added beans or something.

Anyway, any good recipes?

    Vegetarian Chili

    2 cups sliced mushrooms
    1 onion, diced
    3 – 4 zucchini, roughly diced
    2 bell peppers, any color, diced
    1 – 2 tablespoons chili powder, adjusted to taste
    1 tablespoon of Paprika or smoked paprika or combo of the two
    1 15 oz. can kidney beans, with liquid
    1 15 oz. can black beans (or other beans of your choice), with liquid
    1 jar marinara sauce or Canned Plum Tomatoes (Italian style)
    2 tablespoons tomato paste
    1/2 cup bulgur wheat

    I've never put the bulgar wheat in... I usually use canned plum tomatoes or frsh from the garden. It's even better the next day...Enjoy

    In a large pot, combine the mushrooms, onion, zucchini, bell peppers, chili powder, and 1/2 cup water or chicken stock. I used homemade chicken stock. Bring to a simmer over moderate heat, cooking until the vegetables are slightly softened, about 5 minutes. Add the beans with their liquid, the marinara sauce, and the tomato paste. Bring to a simmer and cook approximately 8 minutes, to blend the flavors, stirring occasionally. Add the bulgur and cook, stirring often, until the grains are tender, about 10 minutes. If the chili gets too thick, thin with water. Season to taste with salt and pepper.

    My family and friends all love my black bean chili recipe.

    3 cans of black beans
    1 can of crushed tomato
    1 packet of chili seasoning
    1/4 green bell pepper
    1/4 yellow bell pepper
    1/4 red bell pepper
    1/4 orange bell peppee
    2 medium carrots
    1 large yellow onion
    2 cloves garlic
    1 Teaspoon of cumin
    Glug of Olive oil
    Salt and pepper to taste
    (I sometimes add a can of rotel or a jalapeño if the kids aren't eating)

    Garnishes are all optional:
    Cilantro
    Lime wedges
    Cheese
    Sour cream

    1. Dice all veg. I do a fairly small dice on the carrots since they usually take longer to cook than everything else. Saute in a descent glug of olive oul until the onions are soft. Season with salt and pepper.
    2. I add black beans and tomatoes now (don't drain. Add the liquid in from the can). Give it a good stir all together and bring it up to a bubbly boil.
    3. Add sasoning packet (or your own special spice blend) and cumin. Salt snd pepper as needed.
    4. Cook for maybe 30 minutes. I always use the doneness of the carrots as a barometer. We serve ours with cornbread.
