That is a pretty big deficit but as long as your eating enough of the right calories (minimum of 1,200) you should be fine. To low and your metabolism will slow down too. You can do this my friend

Me too. I've been diligent since June and I've lost and gained throughout. But the calculations are pretty right on...I go over in calories I gain...stay at or under and I lose. Now staying at or under is coming much easier. Only 4 lbs to go...WooHoo

30lbs in 3 months is a lot my friend. Don't set yourself up to fail. Please know this isn't to discourage you but to help you be realistic with your goals. It all happens in time but don't sacrifice your health by not eating enough.

I make my own granola bars and they are awesome. It has natural sugars primarily from Dates and Honey but not so much that it will hinder your goals. They are low in saturated fat and just the right amount if good fats. If you're interested I'll send you my recipe.

For every gram of carb you eat your body retains 4 grams of water. You'll go up due to water weight but the total calories are what count. Stay at or under your caloric and carb goals and it will balance itself out and you'll begin losing again. Hope this helps.
