Made a pot of collards with smoked turkey leg last night for a few meals...love this stuff, crap-tons of flavor

Dinner last night: Creamy Sun Dried Tomato and Parmesan Chicken Zoodles. The photo does not do this meal justice, it was SO SO GOOD! Next time I will up the amount of chicken though. I wanted more meat.

Zoodles are zucchini noodles made with a spiralizer or vegetable peeler. The chicken is just added to them.0

Three slices of deli roast beef heated up with some Gouda cheese slices and a side of sugar free bread and butter pickles. Yummy! 3.6 carbs1 -
Last nights dinner: Chicken Parmesan for one (super easy) and a salad with bacon, parm, tomatoes, italian dressing and crushed bruschetta toasts (only 2 small ones!). DH is a CPA, so lots of solo meals lately. During busy season, I am pretty much single.
For the chicken parm, I just cut up and brown a chicken breast with salt, pepper, butter and olive oil in a pan. Then toss it with jarred sauce (I love Rao's brand). Add the chicken and sauce to ramekin, top with shredded mozzarella and put in a 400 degree oven until bubbly. Top with chopped parsley. Yummy and quick meal.
