It's my official one year mark on MFP today. Happy Ketoversary to me! I made a quick supper by sautéing mushrooms and asparagus in butter, then adding leftover roasted chicken leg and thigh, and adding in some of the "gravy". It was simple, quick and good.2 -

Loaded chicken with creamed spinach, chorizo and cheddar with mixed frozen veggies on the side

One of the things I grew up on and love to eat is great for this diet... Perfect fat and protein mixture... Only problem very few people can stomic to eat them... Yummooo. Pork chitterlings...

Chicharones Chicken fried in bacon grease - yummo I served these with Cauliflower Mash for our Sunday dinner.
Chicharones Chicken Recipe
- 5 pieces chicken thighs and/or drumsticks
- 2 eggs
- ½ bag of crushed chicharones (pork rinds) - I recommend the SPICY ones because your chicken will taste Cajun - yum!
- 1 cup bacon grease
1. Pour the bacon grease into a large frying pan. Heat on medium-high (slightly medium-high - more medium than high).
2. Crack the eggs into a bowl and whip up with a fork to make your egg wash. Coat the chicken in the egg wash, then in the crushed chicharones next.
3. Place the chicken in the pan. Flip and watch the chicken over the course of the next 30 minutes or so. Remove chicken once the coating has browned well.2 -

For breakfast I had egg omelet with bit of tofu, avocado, baby spinach, bit of yellow pepper, coconut oil, ground flax seed. My food diary is fairly dull but wide open and does not leave me hungry.1 -

Second picture is my "sandwich stack". Stacy all sandwich fillings on a plate, and eat with a fork! So satisfying!!
I have done the same thing at my favorite pizza parlor - I asked them to put everything that would go on a slice (or two, or three) in a pan and bake it for me: sauce, cheese, sausage, mushroom, etc. Love it! Pizza in a cup (or pan in this case).1 -

Yep! I read about it on the Ketogenic Success Facebook Page a couple of months ago. Sounds disgusting, I know, but it's delicious! I rinse the egg first in warm water then blend it up with the coffee, butter and coconut oil.0 -
