Since I am not eating meat this month, I have to think ahead what my next meal is going to be.
I think for today's meal I will do Eggplant Parmesan over zoodles with a salad.0 -

Recipe is pretty simple. I used 2 eggs and mixed in some buffalo wing sauce for wet ingredients for the dry I used grated parmesan cheese, about 1/4 cup almond flour, 1/4 cup oat fiber, and 1/4 cup flax meal. double battered the cauliflower in the egg and flour mixture and baked in a 450 degree oven. After they came out of the oven I tossed them in the buffalo wing sauce to coat.
Those were good, but I later made some for my husband (he wanted them more crispy and not coated) where I made a wet batter mixing the flour (used seasoned regular all purpose flour) with the egg mixture, coated the cauliflower and fried in a mixture of avocado and coconut oils. They were much crispier. He dipped them in the buffalo wing sauce and blue cheese dressing instead of tossing and coating them with it; he loved them.
For the buffalo sauce I got frank's buffalo wing sauce; heated in a sauce pot with some butter.0 -

Tonight's meal, OMG soooooooo good. My husband again had two servings and said I outdid myself on this one.
Eggplant Parmesan, Zoodles, chocolate kale shake, and chocolate lover's mug cake along with wheatgrass juice while meal was cooking.

Happy Saturday everyone! I just had to come and share. I was down another 2.4 pounds this morning. Those vacation pounds are going, going, and will soon be completely gone. I am so close to getting out of the 160's and I don't plan on messing things up this time. I could be in the 150's within the next 3 days

I joined the just give me 10 days thread with a goal for the 10 days of 165 pounds with a starting weight of 169.8 pounds. After the second day I was 164.2 pounds so I changed my goal to 160. Here it is the 5th day and I am at 162.0. It is possible I could be in the 150's before this 10 day challenge is up.
I too am loving my vegetarian meals. I don't think I will end up going total vegetarian, but I think I will have 3 or 4 vegetarian days a week.

So, I have been thinking about how I plan on making OMAD a true sustainable way of eating for life and I think I have figured it out. Incorporating vegetarian OMAD days and feast days. After my complete month of vegetarian meals, my forever way of eating will look like this:

rotating types of Omad that´s what I had in mind too... we can choose types of eating styles during our window thats fantastic!1

I made your buffalo cauliflower bites last night. They didn't look anything like yours though - I don't think I've ever battered anything in my entire life and wasn't really very good at it. I ended up with two bowls full of goop! I realized after I should probably have used a bag for the dry stuff and shaken the pieces around. Or something. Maybe look up a video next time. Anyway - they looked misshapen and ugly but they were delicious!! They were actually pretty crispy from the oven. Dipped them into straight Frank's.0 -

I could definitely eat that meal again and have some leftovers so I will be eating some of it again tonight if my husband doesn't eat it before I get home from work.0

Tracey.....GIRLLLLLLLLL... You are speaking to the Southerner in me!!! My family is from the south even though I grew up in Michigan, and my fiance is from Louisiana so I've been cooking Southern for years but I somehow can't get people on board with the black-eyed peas and collard greens! This makes me want all the southern food...ALL.OF.IT.0
