    Work lunch was Taco bowl again, but forgot to put the sour cream on it. Still delicious.

    Dinner tonight was a small steak quesadilla. Low-carb Tortilla, mix of pepper jack and Cabot lite Cheddar, a little Taco season and a little sour cream for dipping, sliced sirloin steak. Yum.

    Ooo taco bowls are a favorite! So many options for topping depending on what you're feeling or how many calories you have available. Sometimes I have meat and sometimes beans. Often make fajita veggies for it.

    Tonight I am having spinach and ricotta ravioli in tomato sauce with some broccoli on the side.

    Living in the land of Tex-Mex here! I tend to avoid it due to way too much cheese, fried shells, high fat tortillas etc. There are ways to cut down the calories but it takes work and that’s usually done when prepared at home. I get low carb tortillas, drain/defat meats, and go easy on beans and cheeses. Tex-Mex restaurant food is eye popping calorific. Even the salads.

    However, authentic regional Mexican food is excellent and worth exploring.

    Today was a fun day. My youngest had her all-state band performance and it was in town this year. So we went and watched that, then went to the big art festival right next door. Had a walking around beer. After, we went for dinner downtown (walked over) and my daughter and I shared carnitas loempia with a sweet and spicy dipping sauce and then a steak sandwich entree. I took a third of the steak sandwich (with mozzarella, sauteed mushrooms, think sliced Ribeye, chopped pickles and white onion) and wasn't feeling too hungry at that point so I ate all the filling and left the bun. Then we played a round of free minigolf that was laid out around the big block the courthouse is on. Then, we went for Gelato. I had a kid's size, they didn't have pistachio (sadness), but the coffee flavored one was delicious. Lots of walking and outdoor time, delicious food consumed in moderation.

    Sounds like a pretty successful day, Nicsflyingcircus! Coffee flavoured gelato - that sounds like an amazing hot weather treat.

    Took hubby to a middle eastern buffet for a belated birthday lunch. Tabbouleh, dolmas, humus of many flavors, falafel, eggplant..... feta flying everywhere. Baklava and spiced tea. Delicious and impossible to log. So I just called it a 2000 calorie day which is about 700 above my usual limit.
    Tomorrow will be eating at home and much more in control.

    Flank steak marinated in red wine vinegar, olive oil, garlic, salt and red pepper flakes. Cremini mushrooms, red onion and asparagus sauteed in a moderate amount of butter.

    Tonight is greek chicken burgers topped with tomato and tzatziki, 3 bean salad, and corn on the cob.

    The rest of the week:

    Breakfast: Yogurt with granola and berries (grain free granola from last weekends market)
    Lunch: Frozen meals (need to clean out that freezer
    Dinners:
    - Mushroom and Italian Sausage Fettuccini (freezer meal), broccoli
    - Meatloaf, au gratin potatoes, sautéed green beans

    I have 2 weeks to clear out the freezer before my stock up trip!

    Tonight may be takeout. I was going to make buffalo chicken dip but the physical labor I committed to (clearing all the old mulch, leaves, loose dirt and sticks out if our humongous front beds) is like half done and I want to die.

    So we ordered wings, I was very excited. Order gets here, mine is not included. I almost cried. I didn't want to wait an hour for another order, so I gave up and made myself two piece of bacon and a giant plate or scrambled eggs (3 eggs, 2 whites, 1/2 cup of whipped cottage cheese, some shredded cheddar, and chives.) topped with ketchup, done! Very tasty, never used cottage cheese in eggs before.

    Made my lunch for tomorrow. Made a toasted wrap with an Ole wellness wrap, 2 slices of thin provolone, 4 oz of good quality chicken lunch meat, 3 slices of precooked bacon, Avocado Mayo, Dijon mustard, garlic Dill pickles, shredded lettuce, sliced tomato and green onion.

    I'm ordering some egg curry sauce tomorrow! Along with a set of glass jars for local son and I to up our weekly healthy food exchangen. 12 jars in rotation - he brings me 6 jars of the wonderful beet/spinach/blueberry/ginger/lemon smoothy "cure" he has been making for me - and I send him home with 6 jars of green soup for his workday snack.

    Tonight I'm making a fantastic (I hope this time :) ) thai soup to share with some friends...and we are also having a Thursday cake, because it is Thursday, and I made it through surgery number two and we are going to see Goldfinger tonight. All a good excuse to eat a little Thursday cake. They are smart eaters - so it will be a tiny cake - shared - no foolish gluttony.

    Tomorrow another couple of friends and I are celebrating Cinco du Mayo - I've promised to bring tortilla fixings. Planning on trying a chipotle shredded tofu filling with salsa/quacamole/red cabbage? I usually have good luck the first time I try making something (then it goes downhill for awhile :p ). Hopefully tomorrow is a good food experimenting day :)

    Feels like a week for celebration :)

    So the freezer pasta meal was not that good. Would have been great without the Italian Sausage. The sausage just gave it an odd flavor. The pasta and mushroom sauce were decent. Not sure I will eat the leftovers though. I may try and save some of the roasted broccoli I packed along side it though.

    I'm going to run to the store later today anyway, so I can get some fresh eggs. I have hashbrowns in the freezer I need to start using. So eggs, hashbrowns, and roasted broccoli for dinner? Maybe throw some frozen spinach in the eggs or hashbrowns.

    Most likely another frozen meal for lunch unless they have my favorite chicken sandwiches at the store. If so, I am going to grab one of them. Cause yum! Oh... or maybe sushi?

    No soup made - instead I was helping with one person's monumental packing/getting ready to move project. This poor dude has so so so so so much stuff and is a little overwhelmed. Now I'm too weary ( so dramatic :) ) for a movie - so I'm taking their pup (my god dog) for our (Laine and I) evening entertainment and they are going to see the movie. Pasta sauce from the freezer and some real pasta! Fusilli. Feels like a big treat - with some parmigiano regiano :) Ooh la la !

    Athijade- could it be the fennel seed in the Italian sausage that tasted odd to you? It’s common in traditional sweet Italian sausage - and you either like it or don’t.

    Laurie- what are you doing helping someone move 2 days after surgery?!!! Sit down and rest girl!

    We had shrimp and grits today. No cheese or butter though. Still good. I used some cheesy powder from Trader Joe’s for flavoring. Salad on the side.

    Wonder what deliciousness Dante is feasting on today. He makes us all envious. PAVs meals do make me marvel.... sometimes even in a good way.
