    Pumpkin spiced goat cheese. That's a new one on me. Glad it tastes good with the figs :)

    Tonight I'm having what we call "Pork Chop Soup" which is thin-sliced pork chops in the crockpot with cream of mushroom soup, salt, and pepper over rice/riced cauliflower.

    It works! I can actually see you on your profile page. What a beautiful lady you are, Connie. But no matter how classy your natural looks are, I think you're getting to the "Hot Mama" stage.

    That stew looks wonderful, Janatki! I'm starting a "fill a second freezer" cooking endeavour so that I will have healthy, delicious food to eat when I hit my one-armed cooking status at the end of next month. The assistant said I could count on 6 weeks - maybe up to 8. So I want to be prepared. Can't eat pizza for two months (well I could, but....)

    This will definitely be one of the dishes stashed away!

    Thank you…my mom was a beautiful woman and I think I look like my dad!…I am high maintenance…..my husband will verify that!….

    Lean burgers, mixed vegetables, and a huge salad….simple, clean and no food touching….

    It's about 200 for everything on the plate - 120 cals for 48g of figs and 80 cals for 28g of the cheese.

    Had a rough weekend due to a noise complaint against my neighbors escalating to a cop showing up and dealing with them scream profanity at me. I suffer from anxiety and this sent me into a panic attack. I was lucky to eat anything. Went a whole day without eating and finally forced myself to get something down.

    Trying to put it behind me now. Yesterday I had no breakfast except for an iced chai latte with oat milk (my appetite is still messed up), some hashbrowns full of veggies with 2 eggs, feta, and hot sauce for lunch, and alice springs chicken (lightened up) with stuffing and roasted asparagus for dinner. Dessert was a slice of apple cake I got from Target.

    Didn't make the chili last night - hopefully today?!

    Lunch will be scrambled eggs on kale + "red" soup (sweet potato, barley, black beans, spinach in a very tomatoey base - much better than it sounds!)

    I am attempting to make a chicken pot pie for dinner…..I have a ready made pie crust in the refrigerator and I was thinking I’d using a cookie cutter to put cutout shapes on top!…plus a salad and coffee with biscotti for dessert…

    Terrible for you ….. I have nice neighbours, but been in your situation though ….Good neighbours are worth their weight in gold… unfortunately ours have just put their house on the market ☹️

    I only do the top….sometime I use the light Bisquik mix but tonight I am using a pie crust pre made and cutting it in fun shapes!….I have a cat cookie cutter and a ghost….thought I would be clever and I put a lot of carrots in it…..for the gravy I used unsalted sicken broth and some jarred chicken gravy…..it smells good but haven’t eaten it yet!

    Definitely some little veggie pot pies going into my freezer! Yes - mushrooms in the gravy! Just the top crust will have a better chance for freezer success too (I think?).

    I should make a chicken pie and put it in the freezer. I adore them and they're very much a cold weather thing for me.

    Also maybe use up the extra steak I have and do a steak and mushroom pie. That would be delicious.

    It was good except the crust wasn’t done and I was starving so I pulled the cute shape off the top and ate it without the pie crust on it lol…saved 100 calories anyway!….

    Those both sound really good. I have actually never tried to make my own chicken pot pies or anything like it. For some reason I always think I have to make my own pie crust. A store bought pie crust would work great.

    My cousin got a new deep freeze and has offered to let me store some meat over there instead of in my tiny freezer so I should now have room for something like that.

    Hmmmmmm...

    As for me... I was sick again last night. I don't THINK it was anxiety but it could have been. My anxiety has just stayed higher since the problems this weekend so it is possible. I don't see my therapist until the 11th which is about killing me.

    So not sure what food will look like today. Most likely just whatever I can stomach. I have meetings all morning too so that always throws things off (and is really the only reason I am up... seriously thought about a sick day but since I work from home everyday but Friday, I wanted to try and push through.).

    I haven't made a savoury pie either - I've done strudel type things with lentils, but not a pie - and I think this dish would be so perfect for a wintery dinner! Can't wait to try it.

    Maybe a curried chickpea pie too!

    Might have to get some of those little tin foil pie plates - the really little tart size ones to keep the calorie in check :)

    That veggie root chili I keep speaking about has only turned into a bigger collection of ingredients. Hopefully tonight?

    In the meantime, scrambled eggs on a bed of kale for lunch...with ????...all I have in the fridge/on the counters is chili ingredients...lol... so some sort of root vegetable.

    Was attacked by a huge Costco muffin at super 8 today. We went there because days Inn had Central heating/air and noisy fans on the way through. But their breakfast was quite a notch up, especially since these guys are brown bagging it for covid. Funny this: same operating umbrella (Wyndham), same town, totally different amenities open, all claiming to be following health guidelines. Current guidelines don't actually call for closures super 8 style, but days Inn is a bit too lax in not checking vaccine status when allowing people to eat and swim in close proximity. Whatev!

    Confirming that huge Costco muffin is not worth the calories🙀😭

    Usual coffee only for breakfast, doctors appointment at 2 and expecting to be up 5 pounds since mid June….my wonderful doctor is leaving and this will be my last visit with him….he has helped and guided me so much through my weight loss….fixing chicken salad for lunch and chicken enchiladas for dinner….surprised I don’t have feathers….I would like a Cosco muffin lol
