    Ok, so yesterday was supposed to be a fab start to the month for me...did not work out that way. It wasn't horrible...but it was a far cry from fab. I did not take enough food with me for my 12 hour shift and ordered from Yogi's Grill...salad* and rice and steamed veggies*. Let's try again today.

    *Oily dressing, which I ate...*packet sauce for the veggies, which I also ate. Felt sick afterwards. Duh!

    Off to the kitchen to prepcauldronsmileyf.gif enough food today for my 11 hour shift.

    My habit is a salad for my 4 work days. That seems to keep me on track !

    Nice to have a 4-day work week, but those are looong shifts, Nance! How awesome that Lulu walks with you on the TM!

    My doc was getting irritated with me yesterday. She wasn't super obvious about it, but she definitely was. She's not the best fit for me but I've been on the lookout for more plant-friendly docs and no one is nearby (except for across the border in Canada but that is out because you have to be a resident there to get the free Canadian healthcare). I asked her if she's looked into plant based and read 'Eat to Live' and she was insulted by that. Something to the effect of 'yes, over my long career I have read about that. She said it worked for short term weight loss but that you need complete proteins and that I should consider taking ground up liver supplements. It went downhill from there.

    In any case, I need to book an appointment for an ultrasound because I had very heavy bleeding last period, accompanied by strange pain. I am due for a mammogram as well, so I'm going to book a two-for.

    I know I need to eat better. I still have a lot of weight to lose and this on-again off-again nonsense is hard on my physical and mental health. I have a lot of guilt associated with bad eating choices and now I feel like I have something to prove to my doc as well. Not helpful. But at the same time, if I believe in this lifestyle, I need to get on track and stay there.

    Working on my next weaving project today, tea towels.

    Oh, one result of this negative feeling doctor's appointment is that I realized that to really meet protein needs, I should be eating from a variety of sources. So, I'm going to make sure I include quinoa more often. It doesn't raise my blood sugar and increases my dietary diversity.

    Thanks for starting October, Nance. I'm joining you in salads for lunches, plus I'm going to try to start eating two smaller salads at lunch and dinner rather than one big salad for one meal.

    Ugh, Carla. I hate when doctors do that. My doc is old school and I love him to pieces, but he rolls his eyes at the word vegan. There are some decent protein supplements that aren't full of junk. I like Amazing Grass and sometimes add it to my smoothies. I have the same issues with food choices and the weird thing is that I totally love WFPB but still fall into the pretzels or crackers at work.

    I am going to do some cooking later today or tomorrow. I have kale, dandelion greens, bok choy, and a beautiful bunch of chard. Will cook those up with some onion and make a pot of rice or quinoa. Baked tofu. Baked sweet potatoes. Salads this week are red and green leaf, radishes, carrots, yellow squash and zucchini, daikon, green onion. Going to make the Shane & Simple vinaigrette.

    My dryer died last weekend and I had to order new washer/dryer since they are both really old and I figure the washer probably isn't going to last much longer either. Appliance orders are so backed up that I won't get the new ones until week after next so I have to wash my clothes and hang them to dry for two more weekends. I'm going to have a huge pile of towels and linens to do by the time the new ones arrive.

    Oh and speaking of not ideal choices I drank too much wine last night and made TJ's veggie potstickers for dinner.

    Got most of my cooking done. The sweet potatoes were gross. I thought I got them last week but now I'm thinking 2 weeks ago and they got moldy because I left them in a bowl on the counter by the window. Oops. Forgot that my salad prepping friend got me some bunapi mushrooms (aka beech mushrooms) so I cooked those up in a skillet with soy sauce, lime juice and I wanted sriracha but I didn't have any so I used a dash of cayenne. They are so good! But I only ended up with about 1/4 cup once cooked. Always fun to try a new variety of plants. Salad prepper friend always tries to find new things for me to try. I have her buy bunches of greens too, not to prep but just to save me running to the grocery.

    Did get the tofu baked, pot of quinoa, and cooked the greens so dinner will be a big ol' bowl of quinoa, greens and tofu on a bed of raw lettuce.

    Mihani: nice work on your prep. Feels so go to have a bunch of stuff ready to go.

    I just re-discovered my instant pot millet recipe. I'm super excited to have that as a breakfast option for the cooler months when a smoothie does not appeal. (proto millet a great grain for not raising blood sugar)

    Having last of fajita bowls tonight (we pre-chop 3 days worth of the veggies, and then roast 1/3 of them at a time each day in air fryer so they are fresh).

    Tomorrow I'm making some roasted garlic lemony quinoa to have on hand, and we're having sushi bowls with tofu for dinner tomorrow. Tabouli salad coming up next week with quinoa instead of bulgur. I have a recipe for a millet bowl with mushroom gravy and kale that sounds pretty good right now. Not sure if I've made it before or not. It's an Oh She Glows recipe.

    Not a great day yesterday due to appointment, but feeling re-inspired to make healthy choices!

    I think I shared that millet and muhroom gravy bowl recipe a while back, Carla. It is so good! You'll enjoy it. I think the first time I made it I screwed up toasting the millet and burned it though.

    Y'all might think this is really weird, but when I cook up a big batch of greens there is a broth left in the pan. I strain that off into a cup and drink it before refrigerating the cooked greens.

    Been shopping for a vitamix. I hate to spend that much money but I think it's time.

    Almost time to go home...love reading that you are all trying your best...it is such a struggle sometimes...but not giving up and fighting the good fight...that's success. I feel inspired just reading about y'all! <3

    I would just love it if I went home, played huggy love with Lulu and then fed her and then ...just get into bed and watch tv and NO EATING FOR ME. <3

    PS...having salad at work really is a great choice. I don't eat it all at once...I put it in the water bottle fridge (mini fridge) next to my desk...(water for the customers)...and I just need to be sure I have all the stuff prepped to whip it together easily for work. <3

    Drank the rest of the bottle of wine last night and am now, thankfully, out of wine in the house. On the wagon for a few weeks because I have a raging headache from drinking two nights in a row and wondering why I do that to myself. LOL

    Tons of work to do today since I didn't do any yesterday, but I got all my cooking and laundry done so nothing to stop me from spending the whole day at my desk.

    Plan for today...
    B - oats with berries, chia/flax, cinnamon
    L - salad, greens with quinoa and tofu, banana
    D - more salad, roasted broccoli with cheezy chickpeas, apple

    Take a couple Treadmill breaks, Mihani...just to break of the day.

    Oh, and you get headaches from the drinking...I get to feeling sick from stuff I should not eat...namely, salads from Yoggi's grill with OIL. So, why do we do it? Crazy, eh?

    Carla & Mihani, I need to lose 25 pounds...it's been 25 pounds for over a year now...can't get anywhere...Today I weighed 151...on my short body 5'0" (I was 5'2" but lost two inches to back surgery)....that is "weigh" too much. I need to be accountable...that's why I am posting this here and now.

    I am about to shower, get to Sprouts and pick up more salad supplies and hopefully a watermelon. Hopefully!

    So I got into my frozen rice stash after work...I'll tell you, making a big batch and freezing it into little Lock and Lock containers and then heating in Microwave (a couple bits of water over the rice and then cover with a damp paper towel...two minutes, fluff, and two minutes more...OH MY GOSH, better than fresh...fluffier)...

    Anyway, that's what I had after work.

    I am learning that I need to post and then go back and add...cuz I keep losing my entries....grrrrrrrrrrrr!

    today looks like:

    watermelon
    after work: corn on the cobb

    That's what I am thinking. I do think I need to get back to making my own almond milk and eating oatmeal again with blueberries.

    I am not losing...I am proud about a couple of things...you know I am happy about no more Alka Seltzer...and I am happy that I bought my Treadmill (thinking five days a week...hard to walk on my very long days at work)

    Now, I have to add to the things I am proud of...like sticking to my plan!

    going to try the Dr. Scholl's Work Massaging gel inserts...

    have some knee thing a ma jigs on both knees...support sleeve things...not ice...kinda like a tommy copper deal.

    what skechers do you buy, Mihani. I have a really wide foot, so I am limited in my choices...I just ordered some Go Walks...they arrive tomorrow.

    Nance, check out https://walkingcradles.com/ Their shoes come in W and WW. I have wide feet too and I actually had to go a half size down and switch from WW to W for the correct fit with them. dsw.com has lower prices on them if you don't care about the newest styles, but more limited selection. Sneakers, loafers, heels and sandals.

    Kinda great except for the yogurt. It's soooooooooooooo good. I bought four...two berry two chocolate. I'm in a facebook group for Vegan Sprouts. Someone mentioned it and it was crazy good. I caved.

    Here's my take on the pretty decadent yogurt...it does have live cultures. I am always looking for dessert...or something sweet for after dinner. If I just stick with one thing and be happy with it, that kinda keeps me from not feeling deprived. I don't know. Maybe.

    I'm always looking for dessert, too. Last night I had a turmeric latte sweetened with 2 blended medjool dates instead of my usual date & nut snack. One less date and no nuts so lower calories but still too much sugar for me to have in the evening when I'm done with exercise for the day. I'm going to try no dates tonight, and just add some vanilla extract to the almond milk.

    Yesterday's food was good overall. I followed through with the smoothie, had a small amount of tu-no salad for a late lunch and had a sushi bowl for dinner. I made the sushi bowl dressing with half the normal salt and used less of it. I substituted quinoa in place of the rice . I'll admit, it was nice to have a different kind of bowl for a change instead of the usual fajita bowl.

    I finished threading the yarn on the loom, but there's a few mistakes in there somewhere because I'm left with 4 more threads than I should have. That means today I will be looking through it all to find and fix. Hopefully I can get through that today and then next time I can start weaving. Looking forward to making these tea towels. They have fish on them!

    I'm determined to show my doctor how good WFPB is for diabetes and blood pressure. It has really given me motivation. Not the best source (I'll show her!) but eh, whatever works to get me going!

    Did you get your gel inserts, Nance? If the yogurt makes you happy and you are doing so great the rest of the day I don't think I'd worry about it either.

    Carla, any motivation is good motivation! I often think that I am not a very good spokesperson for WFPB since I do indulge in too much junky stuff at times and still have some weight to lose.

    Busy busy day but everyone came in this morning to work so that was a plus.

    B - amazing grass shaken up with water (forgot the oats and berries that I prepared to take to the office)
    L - leftover quinoa and greens, an apple
    D - big ol' salad, watermelon

    Got into the pretzels again today. I'm planning to juice again on Friday. I think it would help me break the Friday night cocktails habit plus it really helped reset my appetite for about a week after I did it. I think I'll plan on every Friday for a little while.

    Yesterday was a good food day, the second one in a row without my date & nut ball snacks. I put 1/2 tsp of maple syrup in my turmeric latte, but couldn't taste it in there so tonight if I have one, I really won't put any sweetener in it!

    I've decided not to make the amazing looking Thanksgiving meal with puff pastry for Cdn Thanksgiving. Maybe for US TG. Puff pastry is just too good and I'm not strong enough right now. Instead, I'm going to make one of the Clean Food Dirty Girl thanksgiving meals, a Cheesy Italian sausage & squash casserole. Still indulgent, but less triggering for me, and something special enough that Joe and I are both already looking forward to it.

    And for Cdn TG dessert, I'm going to have a Pumpkin Spice latte. Here's the recipe in case anyone is interested:

    makes 2 mugs
    2 cups unsweetened non-dairy milk
    1/3 cup pumpkin puree (just pumpkin)
    3 Tbsp of dried dates
    1 Tbsp maple syrup
    1 1/2 tsp pumpkin pie spice
    1 tsp vanilla extract
    pinch of salt

    Blend well until smooth and frothy. Serve hot (or iced).

    Yes, I got the inserts...not sure if I like em...think they make my shoes too tight, so I ordered two pair of skechers size 8 wide...I am a 7.5 wide.

    Also, today will take a trip to Walking Cradles in Sun City West, I think it is...see what they have.

    Tonight, going to see Chicago...local dinner theatre in our town...my boss takes me. I guess cuz I am the only one that can stay up that late since I have no work tomorrow. LOL But she has been taking me for awhile now. This is our first one since Covid. They closed and then they opened with no dinner but you had to wear a mask the entire show. We said NOPE, that's not gonna happen.

    They used to have a menu up...no more...and I was able to order vegan plates. We'll see what happens tonight. Worse case, I will just have the veggies dry. It is a set menu.

    Ok, enough of that.

    Great job on your program, Carla. You show that doctor who's boss and how a WFPB diet is key to a healthy life.

    LEARN HOW TO MAKE A QUICK KALE SALAD RECIPE FOR DINNER TODAY!

    LAY HO MA! This recipe is actually loosely inspired by those pre-bagged kale salads you can find at Costco. Whenever I would visit someone for dinner, you can bet to find that salad for dinner. The thing is, it's quite delicious and I cannot believe that I've never hunkered down to make an inspired version from scratch. Join me in this episode and learn how to make this quick kale salad recipe with a creamy cashew dressing right at home!

    SALAD INGREDIENTS:
    175g black kale
    125g purple cabbage
    225g Brussel sprouts
    1 fuji apple
    150g cherry tomatoes
    1/2 red onion
    1/2 cup raisins
    1/4 cup hemp hearts

    DRESSING INGREDIENTS:
    1 cup cashews
    1/3 cup lemon juice
    1 tsp salt
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1/2 tsp oregano
    pepper to taste
    drizzle of olive oil
    1 tbsp dijon mustard
    1 cup water

    Directions:
    1. Chop down the black kale and place into a large mixing bowl
    2. Thinly chop the purple cabbage and Brussel sprouts. Chop the fuji apple into thin matchsticks and roughly chop the cherry tomatoes. Thinly slice the red onion
    3. Place the veggies, raisins, and hemp hearts into the large mixing bowl
    4. Add all of the dressing ingredients to the blender and blend on high until liquified
    5. Pour half of the dressing onto the salad and toss. Add more dressing if desired
    6. Plate the salad, add some more freshly cracked pepper, and serve

    Hope you find some shoes that suit you, Nance! I have 2 pairs of low heels from them that are great for me. Always hard for me to find dressier shoes that aren't ugly and fit my width. I haven't tried their sneakers yet.

    I just placed an order with www.goleafside.com. They prep 100% WFPB meals that are 'just add water'. $8 per single serving meal, 12 meals per order minimum. Joe and I decided since we're not eating out at all this month we could instead spend $100 on these meals and see how we like them. They check a lot of the Dr Gregor daily dozen boxes.
    They would be great for camping, traveling or even for work.

    I've looked at leafside before, Carla, but couldn't bring myself to pull the trigger. So I'll be anxiously awaiting your opinion! Woohoo for a couple good days on the books. It always helps me when I get on a bit of a roll. Latte sounds really good, I'll have to try that.

    Magic, way to go on the treadmill! I forgot you asked about the skechers. I have several pairs of the gowalk and a couple other styles. They are nice enough to pass as "dress shoes" in the office, if you aren't super fussy about style, which I'm totally not. They last forever and my feet feel great all day. I have narrow but long feet. Like canoes. LOL

    I tried to get some juices today and the place was closed due to an emergency. Darn it!

    B - skipped it
    L - leftover quinoa and greens, apple, some pumpkin seeds
    D - big ol' salad with chickpeas, watermelon
    S - pretzels ... sigh

    Didn't sleep too well last night and woke up numerous times. Definitely going to bed early tonight and hopefully catch up.

    Morning...so, I did not make it to Walking Cradles...I am really not looking for dress shoes...I'm just interested in tennies to help make TM walking easier...and to help me with my day...knees and feet...what a mess.

    The Go Walks did not work. The closed top is the problem. One more pair is coming...I think they are D-lites in size 8 so I am going to see if the inserts work better...I'm a 7.5 WW.

    The show last night was so good...but I love Chicago and this little local dinner theatre, Arizona Broadway Theatre, does a great job.

    I had a salad which I picked out the bacon, said no cheese and no dressing. The entrée was cauliflower steak...wow, I was kinda impressed...with quinoa and other veggies. So that worked. I did not have dessert.

    Hair cut and color today...not trying to cover the grey really, just color to highlight and blend. My grey does not grow out where you see a line...it just kinda weaves itself through my hair. Totally fine with it.

    The place is across town in Scottsdale so have to leave at 8.

    walking cradles has narrow widths, too! but come to think of it, they may not have many sneaker styles without leather. maybe browse online before making a trip to a store.

    Sounds like a great evening out, Nance with good food choices to boot. Always much harder to make good choices while out.

    Leafside is so busy right now that it will take 7 to 8 days before my order even ships. I figured I can make my own breakfasts and soups, so I got all 6 of the bowls with two of each so Joe and I can see what we like best. And 1 mint cacao smoothie because it sounded really good LOL

    I wound my weaving onto the loom after threading, but found some more threading issues after the fact. I guess that is just going to happen no matter how careful I am. 8 different slots that each of the 393 threads can be threaded through. Plus other potential mistakes I won't go into. (poor Joe has to hear about those!). So today after work I will see if I can get those sorted and start weaving tomorrow. Fingers crossed. (a lot of work just to get 2 tea towels)

    Yesterday was day 3 on target. 3 walks, 3 meals, no snacking. I made Holiday Soup for the Soul (containing black beans and quinoa) and I made millet with blueberries for breakfast (easy in IP and so good!).

    Plan for today:
    b: 2nd half of millet w/ blueberries topped with plant milk, walnuts, cinnamon
    l: tabbouleh salad (quinoa instead of bulgur), baked tofu
    d: leftover holiday soup, flourless homemade nut & seed crackers
