    Magic, I like to roast veggies with a sprinkle of coconut aminos and some no salt seasoning. A mix of tahini and lemon juice is nice too and helps them brown with that fat source. I think Carla recently mentioned she used some of Dr. F's walnut vinaigrette recipe to roast veggies and they turned out nicely. I always use parchment paper to make cleanup a breeze. When I make the sheet pan fajita recipe that Carla had recommended I just cook them dry with the spices and they are tasty, although peppers and onions have more water regardless.


    Thank you for this, Mihani! I am going to try sheet pan roasting on my weekend. Keeping it simple with about four veggies.

    Carla, I did order the stainless steel bowl. LOL...I'm ready to do this. Hoping I can lose weight with this program...mainly that I will have more knee time to do walking on TM and swimming and not fooling around in the kitchen.

    It seems like one pouches of any of the "meals" is good for two meals. They seem kinda big.

    The pouches aren't huge, but since it is all dehydrated it is pretty hard to tell. I bet it would be enough for two meals with a little side salad - pre-washed boxed greens with a little vinaigrette and whatever you can toss on top easily! I forgot that I ordered 1 smoothie along with the 6 different bowls (x2 for Joe and I)...so I will try that one out tomorrow morning.

    Oh, exciting! Hope you like it ... but you know what...I am going into this with an open mind...if it can help me with the losing weight and giving me more time to DO MORE...then I can deal with whatever.

    Some of the reviews are really good...some, not so great. But that is to be expected.

    at home:
    nighttime, sheet pan roasted veggies...NO DESSERT

    Tomorrow is my Mom's Birthday...may she rest in peaceblessingssmiley.gif ...so, tomorrow is the day I get back in the pool! My mom passed away at the young age of 73 (I just turned 73). So, to honor her...I am going to begin to MOVE MORE ...in the pool and use my TM...and keep food prep and kitchen clean to a minimum...that means easy, easy meals.

    My mom had all lifestyle diseases...boy, do I wish I knew then what I know now. But such a good mom no1mom.gif ...I miss her so.

    That's a wonderful way to honor your Mom, Nance. I hope you have a fabulous swim tomorrow.

    Sadly, I can't really review the mint chip smoothie - I had a brain fart and accidentally doubled the amount of water I was supposed to add. It was very thin, and with that much water it threw off the flavor and texture. It wasn't too sweet which I'm happy about. Pre-packaged 'healthy' foods are always too sweet, but it doesn't seem like that will be a problem. Sorry I can't give a proper review! We'll be trying one of the dinner bowls on Wednesday probably.

    Nice job on the cooking, Mihani!

    D - cozy millet bowl over greens and balsamic vinaigrette
    NO nut and date snacks!! yeesh. I have been having a problem with this AGAIN.

    Here's the first ply of the yarn I'm making on the spinning wheel. I'll do a 2-ply yarn and then I'm going to use it for some sort of weaving project.

    Enjoy your swim, Nance, and I agree that is a great way to honor your mom. It is an odd feeling to me that I have now lived longer than my mom was alive.

    Carla, that yarn looks lovely. I'm just sitting here patiently waiting for your honest review of leafside before I decide whether to take the plunge.

    After mentioning the sheet pan fajita recipe I got a hankering so I stopped on the way home and grabbed what I need to make them later this week. My preps should be good through Wednesday so I will make them Thursday which will get me through the weekend and I'll start over cooking on Sunday.

    B - skipped it
    L - cooked greens with brown rice, almond milk yogurt
    D - big ol' salad on half a lavash, berries with cinnamon

    I thought the lavash was oil-free when I first read the ingredients in the store but on closer inspection after getting home they do have a small amount of oil. I'll still eat them but I'm disappointed in myself for not reading more carefully before buying.

    Got in half an hour on the treadmill when I got home so yay for that. Going to have dinner then do a couple hours of work at my desk before bedtime.

    Got up and did another 20 minutes on the treadmill. My goal is 20 to 30 minutes in the mornings before my shower, and another 30 to 60 after work. My hip and lower back are so stiff and achy lately from sitting at my desk so much and I am just going to have to make the time and use that pain motivation to get on there every single day.

    Looking forward to your reviews, Carla...Mint Chip sounds pretty good, eh? It will be interesting to see how it tastes with one half the water. My fingers are really crossed that this stuff is good and I can actually lose weight with it. I do know this would be great for post surgery!

    WTG on the TM, Mihani...my knee has been horrible lately...so no TM. I am flooding it with homemade cucumber/pineapple/ginger/lemon juice in the vitamix...supposed to be good for weight loss, but that is not how I found the recipe...I was looking for ways to lower inflammation. Just started yesterday after work.

    Today

    coffee
    cuke/pineapple juice
    oatmeal and blueberries
    taco salad
    cuke/pineapple juice

    I think I might add spinach to the mix. Will hit the stores later this morning.

    Part of the 'Learning to Learn' course I'm taking online, is about overcoming procrastination. It is tied to learning because for optimal retention and deep understanding of what you're learning, you need to build up in smaller chunks over time (rather than cramming a bunch of info into your brain in marathon sessions).One habit I'm starting is instead of sitting down at my PC first thing in the morning and getting distracted with surfing the web, I'm putting my day planner on the keyboard in the evenings to remind me to go through my goals for the day and put in 25 minutes towards one of those goals before sitting down at my computer.

    I put in some time this morning cleaning up the kitchen. It feels good to have it ready for my next cooking session, which will be later this morning when I make some tu-no salad. (<- which is awesome with diced apple or pear btw)

    I've been back to 3 walks a day with the doggos, and Joe and I are making some progress on the greenhouse we've been wanting to build for a year or longer. The foundation is now in place, and the bottom frame is screwed together. We have a drill bit coming in the mail tomorrow that we can then use to anchor the base to the foundation and then we will be able to start building up.

    B - strawberry smoothie
    L - tu-no with apple over greens
    D - cozy millet bowl, greens

    Secretary called off sick today. I knew that two week run of everyone showing up was too good to last! Totally awful day answering phone and getting nothing done.

    B - carrot/ginger/turmeric juice, leftover broccoli
    L - cooked greens/veggies with edamame, brown rice
    D - lavash with loads of lettuce and raw veggies and a drizzle of the Shane and Simple vinaigrette, berries with chia/flax and cinnamon

    Still need to get on the treadmill tonight. Going to work for an hour or so while my dinner digests and then jump on there. I'd like to get back to my yoga and mindfulness too. Hopefully the walking will get my back feeling better enough to start back to yoga soon.

    Car situation yesterday was a disaster...I do have my car back now...but what a mess up on their part...and I work there!

    Anyway, cleaning gal is coming today...and I just putting the clutter away...it's always a race to get it done before she arrives. I did some yesterday...but my knees are so bad lately. The cuke/pineapple drink is helping.

    Today is the same as yesterday...

    coffee (which I am out)...grrrrrrrr!

    done done and done.

    Mihani, I can't believe that secretary called in sick AGAIN. Sorry you were stuck taking calls all day. Hope she is back today.

    I got a lot of good stuff done yesterday using my day planner and anti-procrastination techniques. Today I'm doing testing for work, putting in a bit of time on my math class, and making some progress on the 2nd and last tea towel. Also planning to make some progress with cleaning. Tu-no salad is all prepped for lunch, and since we're having a Leaf Side meal for dinner, I have no cooking to do today and therefore no messing up of the kitchen! woohoo. Will spend cleaning time on the bathrooms.

    B - breakfast out, a surprise treat
    L - tu-no over greens w/ diced apple
    D - going Leaf Side!

    Did not get the swim in...sheesh! But, I did make my juice...and I am pretty pleased with that...it's easy, it's cheap and I think it is working.

    1 cup frozen organic pineapple
    1/2 LONG English Cuke...I peel it even though it is organic
    One whole lemon, peeled...I bought seedless...Costco had a bag of em...pretty cool.
    a whole "thumb" of peeled fresh organic ginger...sliced.
    1 bottle of cold water

    Makes two bottles 16.9...one in the morning and one at night.

    I do think it is great for a number of things...lowers BP, lowers inflammation..curbs appetite...
    helps move things along...so good colon cleanse...helps with sleep.

    I am going to add spinach...cuz I know that can only add to making this juice optimum for health.

    Looking forward to review...that's exciting!

    I ran across the street and got coffee...luckily they had beans and a coarse grind on the machine..some places do not have coarse and I have a French Press.

    Anyway, cleaning gal is here...I'm going to Sprouts when she leaves...need a few things for my salad...keeping it as simple as possible.

    nice job on the juicing! speaking of ginger, I remember juicing a huge chunk of ginger and putting that juice into carbonated water. a LOT of ginger. I could feel the trail all the way down and for a long time LOL. Joe looked up ginger poisoning because he was thinking I might have been killing myself! (no hits for death by too much ginger)

    Hahaha... that's funny about the ginger juice, Carla. I drink ginger turmeric tea often. So, how was the leafside?

    Busy day but at least everyone showed up! Did 30 minutes on the treadmill last night, 20 this morning, and will get in another at least 30 as soon as I'm done with this post. I have exceeded my goal of 7500 steps for the past 3 days. It's a modest goal, and yet I rarely even reached that. I've just got to keep this up until the habit is ingrained because I spend far too much time at my desk and it's not good for me. I even went outside and walked for 10 minutes mid-day at the office. I won't want to do that when the weather gets bad but for now I plan to do that every day. It was a nice little break too since I don't take a lunch and just eat at my desk.

    B - oats with blueberries, flax/chia, hemp hearts, a few walnut halves, cinnamon, unsweetened vanilla yogurt
    L - salad (I wasn't too hungry that breakfast really filled me up)
    D - lots of lettuce and veggies wrapped in a lavash with spicy brown mustard, grapes and 2 clementines

    Just an FYI, girls… I make this in the vitamix…so very easy…just added spinach to my second juice tonight. Spinach always helps me keep things moving.

    Great job on the TM, Mihani…glad everyone showed up for work.

    For some reason the spinach did not work...it just got foamy...weird...that never happened when I made smoothies with spinach, pineapple, frozen bananas...oh well. I will just cook up the spinach with baked potato. YUM!

    Awesome job on the TM, Mihani!

    Alright, the long anticipated Leaf Side review. I asked Joe to rate it compared to other 'add water & serve' type meals and he gave it a 6 out of 10. A bit harsh, but I can see it. Considering the convenience, flavor, and healthy ingredients plus low salt, I give it a 7. It is the best option I've tried that is easy to prep, not outrageously expensive, and is actually WFPB.

    We had the cashew broccoli alfredo bowl. We both ate the entire thing and it was filling. If you have a smaller appetite or want to have a side salad you could probably get away with having it for two meals, but honestly I doubt I'd ever save half...maybe save a bit for on the side with lunch.

    The flavor was good, but not great. Just sort of all one flavor if that makes sense. I could make a tastier cashew alfredo and with more broccoli, but of course with a lot more work.

    It was low in salt which is a plus for me. It is easy to add more if you want and nice that it is low if you're being careful with salt.

    Very easy to make, boil water, measure it, add it and stir well, then cover with lid for 10 minutes. You have to push the dry bits into the water or you'll end up with crunchy bits.

    I'm not sure if we'll continue getting it or not at this point. We'll have to try more of the meals and see. If we go on a holiday or visit Joe's mom in Kentucky, we will almost for sure order some and have it delivered directly to her house. She lives in the boonies and there aren't a ton of good options plus just easier to relax and enjoy the visit and not worry about food.

    I would definitely be ordering it if I were you, Nance, and needing easy meals after surgery. 100%. Healthy and decent flavor.

    I'll let you guys know what I think of the next one I try, but for now we have a stir fry and more of that roasted butternut squash bean soup in the queue so not for another week or so probably.
    p.s. I'm noticing I'm still pretty full and this is like 2 hours later, so maybe half IS a good idea!

    Super duper wonderful review! Great details...very grateful. Yeah, I mean it is add water and eat...how great could it be...so if you are giving it a 7...I think that is very dooable. And even a six is good...I mean it is edible...that's good. LOL

    That is sort of what I figured on the leafside, Carla. I don't think I'll try it for now. I seem to have settled into a fairly good routine lately with cooking a couple times a week. Fortunately I don't mind eating the same thing over several days.

    I'm going to use my remaining day of juices today since my preps are looking a little sad after 5 days. I will make the sheet pan fajitas tomorrow after work, and might pick up another day of juices to do on Sunday.

    I was planning to just keep a bunch of the Leaf Side meals on hand, but since they expire about 1 month after they arrive, that isn't really going to work.

    Another day of using my journal to assist in getting things done. L2L class and math class done. Testing for work, done. Even progress on tea towels and first walk and it is only 10 am here.

    Well done with the journal and getting your chores out of the way, Carla. I seem to recall reading on the leafside website that you can freeze the packages for longer storage.

    One more juice to go today. It went well. I seem to have no problem with one day of all juice, but by the evening of the second day I'm starting to want real food. I'm going to do one more day tomorrow, with juices I picked up from the local place on my way home. Figure it will keep me from my usual Friday night beer or wine. I actually have two more days now so I might juice on Saturday as well or I'll keep the third day for next week. I'll make the sheet pan fajitas tomorrow or Sunday.

    So I guess there's no need to share my menu. :)
