Hey all, so far so good. All the juices have been good or at least tolerable, with the exception of the small bottle they send in addition to the juices and they call an elixir. It is grapefruit and some other stuff plus lots of spices and it is nasty. I managed to drink almost half of the small bottle and poured out the rest. I am not even going to try with the other two bottles. Six juices is just fine. I haven't been hungry as of yet. I did have two cups of tea this morning but other than that just juice and water, water, water.
Still trying to get through some work here. Doesn't matter what I do, it's never enough, but I'll keep at it until 8:00 or so then head to bed.
You're doing great, Nance! I don't think an extended juice fast would be a good idea honestly. After this I doubt I will do it more often than maybe one day a month. I'm committed to doing 3 days now but I don't know that I will ever do it again. Depends on how I feel after 3 days I guess. Right now I feel great with lots of energy.

I am so hungry...but tired...and my knee is hurting.
I'm going to rest a bit when I get home...then if I have energy, will steam up some cauliflower...that's it. Two days is my limit and I am going to have cauliflower to close off day 2. This is not easy.

Birthday weekend... October 13!
A few lunches planned...most of the time spent with Lulu and getting my house in order. My never ending quest.
So, the juicing is really helping...I did a lot of walking yesterday, at work. I think that's how the pain started.

Today is the official Thanksgiving day, but it often gets celebrated on the Sunday. We only ate like it was TG, we didn't have anyone over. My family still can't cross the border to get to us. Just Joe and I, and not a big spread, but a nice roasted butternut squash pasta bake with tofu crumbles and a cheesy sauce in there. Decadent and delish...though a surprise to me...I think my taste buds have changed, I actually enjoyed the soup from the day before more. The same roasted butternut squash with beans in a broth with sage and rosemary. Lower calorie and higher nutrient density too.
I only walked once yesterday and had date-nut balls. Ugh. Reset of the snack timer, starting today! They weren't worth it anyway, so that helps me moving forward. I don't feel like I'm missing out.
Today's plan:

l - leftover soup, homemade flourless nut and seed crackers

I am not sure I'm going to do the 3 days of juicing. I was feeling a bit grumpy today. I pulled my back on Friday and it is still ouchy which accounts for my grumpiness, but I am ready for some food. It's not that I am really hungry but I just want to eat something and craving good things like salad, lentil soup, etc. so that's cool. Not craving pretzels or blue corn chips!
I definitely don't feel as great as I did with the last one. I think my experimentation with juicing may be about over.
My salad prepper friend gave me a big bag of chopped purple cabbage and I'm thinking about making a pot of cabbage and black eyed peas with onion tomorrow. I'll save some to have raw with my salads, but it's a LOT of cabbage. I also have kale and spinach to cook with mushrooms and onions.
Going to try to get a few things done around here this evening so I best be off!

Yeah, the juicing is good when it works and you enjoy it...otherwise...kinda sucky...but it does get you back to losing your taste for all things NOT GREAT FOR US. Good job, Mihani.

Not sure about food today...
I do know I like the steamed cauliflower bake with TJ parm shreds and 505 green chili sauce...not sure of the exact name...but I will get it for you guys. It is spicy...but oh so good.
Back when I was not vegan, I remember making the green chili chicken something or other soup...and we used this green chili sauce. 505 is what it is called...big jar of the stuff at Costco.

Hi all, what a day. Dentist early a.m. got home about 9:00 to wait for washer/dryer which arrived around 10:30. They had some issues with the vent hose so they were here an hour. By then I was famished because I had decided not to juice today but I hadn't eaten anything yet. Had a big salad which tasted wonderful after nothing but juice for two days.
But first I had to read the directions for the new front loaders because I had no clue! Got the first load of laundry started, had my salad, and finally settled at my desk. Then the power went out for a few minutes and it took half an hour for internet to come back. Good grief!
Just started the third load of laundry. I think I will have another 3 loads of sheets and towels after 3 weeks with no dryer, but I doubt I'll get to all of them today. Have to save some fun for the weekend.
So, results of the 2 days of juice. Down 3 pounds (most likely all water weight), no cravings for junky stuff but definitely hungry so I am going to keep busy with work and laundry until dinner time. I am going to try very hard not to give in to temptation for any of the snacky salty at the office now because it doesn't take much to get those cravings back.
Plan on another salad with chickpeas added and an apple for dinner. I got such a late start on work and have so much laundry to do that I won't take time for cooking until tomorrow evening.
Nance, are you planning anything for your birthday?

Congrats on your new washer/dryer ...glad that it is up and running.
Juicing is great for getting back on track...it does get rid of cravings...and for that reason, I know I will always do a one or two day going forward...but that would be my limit.
Moved cleaning gal to next week...not really doing anything today...having lunch with BFF tomorrow...family lunch is 10/27. Big birthday thing is consult with surgeon 10/26.
So, today I printed out my menu...dated it and will check off each item as I go. Let's see how long this way of being accountable lasts. Will keep in a binder. Would love to see where I am every month...with the ultimate goal being a year.
It's a NEW YEAR for me today...needed something to mark the occasion...hoping this helps. I am still getting nowhere.

Two days in a row now with only 2 walks. It has been very rainy and as it starts to get dark earlier this far north, it gets harder to fit them all in. It is light here until 10 pm or so in the summer, but only until 4pm in December, and we have to be careful not to get too close to dusk either, or the deer are in our field and getting chased by the dogs. I will have to either double the length of one of the walks or go for a TM walk every day.

Bean and Butternut Squash Holiday Soup
roasted squash:
3 Tbsp water
3 Tbsp tahini
2 Tbsp coconut aminos
1/2 tsp dried rubbed sage
1/2 tsp garlic powder
1/2 tsp salt
1/4 tbsp black pepper
4 cups butternut squash, peeled and diced into 1/2 inch pieces
rest of the soup:
1/2 cup yellow onion, diced
3 cloves garlic, minced
4 cups low sodium vegetable broth or stock
1 can or 1.5 cups cooked white beans
1 can/1.5 cups diced tomatoes with juices
butternut squash once roasted
2 cups baby spinach, chopped
1 tsp dried thyme
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp dried rosemary, crushed
1/4 tsp black pepper
For the Roasted Squash:
1. preheat oven to 425F. line a baking sheet with parchment paper
2. in a large bowl, whisk together all of the roasted squash ingredients, minus the squash and whisk to combine
3. add squash to bowl, mixing to coat all of the cubes
4. bake 20 minutes, stir/flip and then bake an additional 15 minutes, or until tender and golden brown
5. set aside for soup
For the soup:
In a large stock pot, saute the onion for 7 or 8 minutes. (add a touch of water if necessary to prevent sticking)
stir in garlic and saute an additional 30 seconds
Add the broth, beans, tomatoes and spices.
Bring to a simmer and simmer 5 minutes.
Stir in roasted butternut squash and chopped baby spinach.

How did those black bean burgers turn out, Carla? Thanks for that recipe. Can't wait to try it. I love butternut squash in everything. Adds such a great texture and flavor.

I water sauteed onion and garlic, added some fresh chopped banana peppers, diced carrot, whole bunch of red cabbage, veggie broth and a can of black eyed peas. Spiced it up with cumin, turmeric, black pepper, celery seed. It is simmering now and I may add a cup of bean pasta to soak up some of the broth and give it an extra boost of bean power. These "throw everything in the pot and see what happens" meals are almost always delicious.
Will dice up an apple and mix it with some thawed mixed berries, cinnamon, chia seeds after dinner since I haven't had any fruit yet today.

Busy busy day yet again. Glad this week is almost over. I brought home a couple files to work on tonight but doubt I will. It's Thursday and even if I work on them they won't get finished until Monday so I may as well put it off until the weekend because I am beat and want to get to bed early.
Have plans to go out with friends tomorrow after work so there will be some wine. Other than that I have had a nearly perfect WFPB sort of week.

Hello there Hawksgirl...thank you for the birthday wishes...thank you ALL for the birthday wishes...had lunch with my bff...(best friends since kindergarten...68 years ago...crazy, eh?)
Been up most of the night with a back that is in pain...and it won't let go...I have heat on it right now...but I am going to call in ...I never take sick days...but I just can't see me sitting for 13 hours with this frozen back.
Food today will be basic stuff...salad, steamed cauliflower and maybe Ezekiel cereal and Eden soy.
Later, dollies...going to get into a hot shower to see if that helps loosen it...I have a nice big heating pad...will use that most of the day.

Oh no! Sorry to hear about your back pain. Hope the hot shower helps. Wonderful that you have a friendship going all the way back to kindergarten! I met up with a friend from kindergarten 10 years or so ago and since then we've kept up online. She lives too far away to hang out, but we have a lot in common.

Had so much fun last night. We had 10 people out at the bar/restaurant and we talked and laughed for almost 3 hours.
Going to spend most of the weekend at my desk but also have to do some basic housecleaning, laundry, and cooking. I have more cabbage but am out of black eyed peas so I think I'll run to the grocery since I need some other things too. I really loved that soup/stew and will make it again for this week. Also greens to stir-fry with onion and mushrooms, a pot of quinoa or rice, salad dressing. Got 3 huge broccoli crowns and will roast those. I didn't have any broccoli last week and I missed it.
Salads this week: red and green leaf, carrot, radish, sweet pepper, baby kale and spinach. Think I'll make the miso ginger dressing.
Plan for today...
B - ezekiel toast with a smidge of almond butter, berries with chia/flax and cinnamon, tea
L - big ol' salad
D - greens with cheezy chickpeas and rice or quinoa, an apple
I got a sampler of 15 different types of herbal tea so I could try some new varieties. I drink English breakfast tea in the mornings but need to cut back on the caffeine. I usually have two cups before I leave for work then another cup or two at the office. I'll switch to decaf/herbal once I get to the office from here on out.

Mihani, sounds like a great night out! How are you liking your new washer and dryer?
I lost a lot of my momentum for weaving the tea towels, but I did finish the first one yesterday. One more to go and then on to the next project. I have materials for a prayer shawl for my Mom and a scarf that is woven to look like a snakeskin pattern. Not sure which I'll do first. The threading for the scarf is tricky, but because it is a scarf it isn't that wide and isn't as daunting as the shawl. Either way, I want to complete one of the two projects before ordering materials for the one after those.
I'm also treating myself to a monthly fiber club where I get a surprise braid of fiber for spinning into yarn. This is my first month's fiber. I love it!

So, I have decided to keep my meals as simple as possible...for now at least...no real recipes. My kitchen is clean at the moment...and to mess it up, well, I just don't have the knee strength to do it fast at one go...it takes days...that's ridiculous! So making less of a mess means less time having to clean up...means more time for pool, TM and Lulu Time.
Salads, sandwiches, pizza, spaghetti squash spaghetti with noodles, oatmeal, Ezekiel cereal, rice and stir fry, baked potato...AND ROASTED VEGGIES. (My starting l list.)
Ladies, any tips on which ones to add to the mix and how to actually do it. I never made sheet pan roasted veggies. (Of course, I am on the YOUTUBE look out...lots of ideas there...just wondering what you guys do.)

I just put an order in for the complete 22 meals. Looked at the facebook page and it dawned on me after reading one of the reviews...I need this after knee replacement surgery.
So, now I will check out which ones I like and then have an idea what to order.
Someone mentioned cooking them in a small crock pot...I guess it helps with the gritty-ness...not sure. But if you have facebook, there are some good points in there to help you out.

Just received the Leaf Side meals! We have some fresh veggies that need to be used so it will probably be 3 days or so before I try them out. They have a one month expiry and are in little clear pouches. I see chunks of dehydrated veggies, noodles, etc and spices in there. You add boiling water to the contents of the pouch into a bowl with a tight fitting lid and let it sit 10 minutes. I'll update again once I've tried one.
Soaking chickpeas to make tu-no tomorrow. Tomorrow's dinner will be a cozy millet bowl over greens with balsamic walnut vinaigrette and diced pear.

That fiber is beautiful, Carla. Can't wait to see what you make of it. Let us know how the leafside is. I just can't bring myself to spend that much on them, at least not right now with all the other expenses going on in my life.
Magic, I like to roast veggies with a sprinkle of coconut aminos and some no salt seasoning. A mix of tahini and lemon juice is nice too and helps them brown with that fat source. I think Carla recently mentioned she used some of Dr. F's walnut vinaigrette recipe to roast veggies and they turned out nicely. I always use parchment paper to make cleanup a breeze. When I make the sheet pan fajita recipe that Carla had recommended I just cook them dry with the spices and they are tasty, although peppers and onions have more water regardless.
Got my cooking done last night. The kale I bought looked good in the bunch but when I untied them the leaves on the inside were gross so I had to toss. I had plenty of bok choy, cabbage and baby spinach/kale so I still made a huge skillet of veggies (included onion and carrot) and added soy sauce and shelled edamame rather than black eyed peas as originally planned. Also made jasmine brown rice, roasted broccoli, shane and simple vinaigrette.
B - roasted broccoli followed by thawed mixed berries with chia/flax, cinnamon and 1/2 cup oats with water, 2 cups of tea
D - salad, cooked greens and edamame with rice, an apple
Speaking of dinner, think I'll go have that now! I have been busy with work and forgot about lunch but now I'm hungry.1 -

oh! i missed your post about ordering them, Nance! I am looking forward to your review...I only purchased the bowls for now. If you like them, they will be excellent for post-surgery and also good to keep a few at work for when you forget your meal.1
