Hi All,

I saw a post on one of the other forums so I thought maybe we could post pics of our low carb meals? I am still learning and am super early on the low carb journey so it will be helpful to see what it all looks like :-)


These are my "Egg Muffins" Made with Egg, Bacob, Mushroom, and tomatoes and backed for 20 mins

This is just Roast Chicken (made in my halogen oven best invention EVER) with cauliflower rice and salad

    Hi all,

    I thought I would post my lunch and dinner, hope you dont mind me hogging all the picture space :-)

    I found a low carb wrap (Joseph's - Flax, Oat Bran & Whole Wheat Flour Lavash Roll-Ups, 0.5 Lavash 4g net carbs ) for easy/quick lunches it was sooooooo delicious! And was only 4g net carbs. Is there any reason I should be staying away from this so early in my low carb journey? I have ordered The Atkins book and I think I might do the induction period so I know if I do this then the bread is a no no but for now it was delicious! I had it with Mayo,Cheese and warm chicken breast and salad :-)

    Then For Dinner we had spaggetti but without the pasta ;-) Lean mince, Garlic,onion,peppers,onion,mushroom. The only thing was I used tinned tomoatoes but they seem to have a lot of sugar so I will re look to reduce that but it was soooo good!

    I had an atkins chocolate bar today because I was craving chocolate so bad! But again I know with the induction this will be a no no.

    Green Leaf Lettuce, fresh basil, sugarplum tomatoes, marinated mozzarella, olive oil, and pepper

    Ground lamb sauteed with onions,sumac, and paprika and then tossed with parsley and feta cheese. Served with poach eggs, lemon juice, and a side of lebneh (super thick yogurt).

    I switched it up a little and made it my own..

    I used half a pound of ground beef and half a pound of sausage instead of the ground turkey.

    I added red hot pepper flakes

    I didn't add any extra green pepper inside

    I used an organic pizza sauce that only had 2 carbs per 1/4 cup

    I put extra cheese on top, then put it in the oven on broil until the cheese started to bubble/crisp

    What a great topic! As I read your post, I am eating a soup I made today. I took two pieces of bacon and cooked them in a large dutch oven. Then I added peppers, onion, baby carrots, celery, garlic, and sauteed everything in the bacon grease. Took out the veggies and sauteed the chicken. Then put the veggies in, and added 2 boxes of chicken broth and filled the rest with water. Added some tarragon, red pepper flakes, salt pepper, parsley flakes and whatever other spices. It's really really tasty!

    Oh, and I added a pat of butter to my bowl. Mmm. Maybe I will get my camera out.
