    The food looks amazing....I might convert yet. I am trying a low fat diet, but not watching carbs. Can your diet be low fat?

    If your doing low carb, you have to have fat to lose, because you need it for energy. Do some more research on low carb.

    Another zucchini crusted pizza!

    What recipe/method did you use for this? I have tried the flax crust, and the cauli crust but would love to try this one :o)

    1 Cup of Zucchini shredded and Squeeze
    1 Cup Shredded Mozzarella Cheese
    1 Egg and spices

    Ok I have some more!

    I had some cauliflower rice with this, it was soooo good!

    I remade the muffins and they came out so good!

    Oh i made the muffins last night, i used an egg for each muffin, bacon pieces and grated zucchini (cooked in the wok together) . mixed it in with the egg mix and divided it up in the muffin tray. after cooking for 10 min, topped with tasty chesse and dry herbs, back in the oven for another 5. Soooooo yummo! My b/f absolutely loved them and means i don have to organise breakfast for a couple of days..

    p.s what did you use to pop them out so perfect? mine kinda stuck a bit :(

    I'm new to this forum. I joined MFP a few months ago and have had a hard time losing with the calories I'm allotted (only 10 lbs in 4 months). I noticed I almost always maxed out my carbs for the day and decided after 3 months of exercising with little results that I would switch to low carb. It's been a week and I've lost 8lbs already (I know a lot of that is water weight). I'm going to stick with low carb until the wheels fall off. I'm very inspired by all of your meal pics and hope you add me as a friend. Take Care.

    I did not make this so I don't have the recipe. I had this for breakfast this morning. it's Casey's pizza without the crust.

    How do you make them??

    Sprinkle mozzarella in a non-stick skillet and sprinkle Papa Murphy's Pizza topping on top. cook till brown, roll up.

    I just made the yummiest dinner! Breaded, fried chicken with "gravy" for 3 net carbs!

    Recipe:

    2 butterflied chicken breasts, lightly pounded just so they were the same thickness
    seasoned salt and garlic powder
    1/4 cup almond meal
    2 T coconut flour
    1 T unsweetened coconut (I don't think this added anything, it wasn't coconut tasting, so will omit it next time)
    2 T oil for frying

    1/4 cup half and half
    2 T chopped Italian parsley
    red pepper flakes to taste

    Heat oil on large pan until a bit of almond flour tossed in sizzles. Mix almond meal and flour in shallow dish, add any other seasonings you like. Season one side of chicken breasts with seasoned salt and garlic powder, then dip both sides in almond mixture. Fry on each side 3-5 minutes, or until browned nicely and cooked through. Remove chicken from pan, and into pan drippings (should be oil left + some of the almond meal mixture that fell off and browned) add half and half and chopped parsley. Cook and stir for a minute for the parsley to wilt, and add red pepper flakes and salt/pepper to taste.

    ETA: The 3 net carbs were for eating 3/4 of this recipe, there is half a piece of chicken and some gravy left over.
