Thaw tilapia fillets, top with blacken seasoning, fry over high heat with a little EVOO. Place on Bed of baby spinach, Squeeze 1/2 lemon on top, and dice up some avocado.0 -

Flour the chicken in Atkins Baking mix
Fry in Butter and Olive Oil till chicken golden brown
remove chicken and add 1/2 cup chicken stock to pan
1/2 lemon squeezed
let reduce
add back in chicken and capers

Mushroom Cap EVOO both sides, cook at 375 for 40 min flip 1/2 way.
once done, put low carb sauce cheese and other toppings

What a great topic! As I read your post, I am eating a soup I made today. I took two pieces of bacon and cooked them in a large dutch oven. Then I added peppers, onion, baby carrots, celery, garlic, and sauteed everything in the bacon grease. Took out the veggies and sauteed the chicken. Then put the veggies in, and added 2 boxes of chicken broth and filled the rest with water. Added some tarragon, red pepper flakes, salt pepper, parsley flakes and whatever other spices. It's really really tasty!
Oh, and I added a pat of butter to my bowl. Mmm. Maybe I will get my camera out.

funny.... people eat like this all of the time, but when you actually say the words LOW CARB they go nuts. I remember just eating eggs and spinach, turkey bacon for breakfast. Lunch I would have cabbage and left over chicken or a chicken salad with about 2-3 eggs as a topper. Dinner would be a turkey burger, with no bread, and lots of sauteed onions and various bell peppers. I was eating low carb and didn't even know it. Well... but then in between meals... oh.... we don't want to go there... lol! ice cream. cookies. cakes. chips. you name it. And to think all I had to do was cut out that stuff and eat a protein snack.
The more I read these messages, the more I am leaning toward giving this a try again. But I am concerned about the cholesterol and fat content.0
