@ettaterrell I start with a red curry paste (Mae Ploy brand, but usually grab whatever I can find at the Asian market) so I cheat a bit. I don't tend to measure stuff (which is why i get I trouble with my logging if I get too creative in the kitchen). But, I started with a chicken stock base, added fresh ginger, garlic, lemongrass and red chilli peppers, a splash of lime juice and fish sauce and some coconut cream. Then I just tossed in my prawns and some straw mushrooms.
I use the same ingredients to make my Red Thai Chicken soup, but I thin it out with more stock and coconut cream.1 -

            I tend to agree @KnitOrMiss . Not much looks better than grilled meat.
I do love my heavy cream though. I've thought about going on a liquid diet using just heavy cream, but figure I probably shouldn't. I can drink a full 8 oz glass of it with no problem at all.2 -

            Yumm! I need to start taking more photos of our meals... tonight was creamed spinach and honey butter lil' smokies. Super easy and not carb-heavy at all, despite the honey in the smokies.0

My take on the classic BLT using sliced cheddar in place if the bread. Sometimes I just do a lettuce wrap, but for some inexplicable reason it's about 10 times messier.
Also a tuna melt. (I guess I'm on a faux sandwich phase!) I made tuna salad, put cheese on top, nuked it, and then ate it on cucumber slices. The melty, hot tuna and crunchy, cool cucumber was a nice contrast.3 - 
            That BLT looks good! Not sure why I've never thought of it, I eat lunch meat/salami between 2 slices of cheese all the time.1

Oooh, I never thought of using cheese as the bread instead of a lettuce wrap xD You're absolutely right about the lettuce wrap being so messy.

Sunday: burgers stuffed with chili and cheese, cheesy cauliflower, and grilled veggies.
