I'm doing a 10K in a few hours, so normally breakfast would not be this big...
Bacon, 6 eggs with HWC and cheese in them. Coffee (not pictured).

I love going to restaurants because most of the time if you ask, you can customize just about any dish into something low carb. This plate is carnitas mixed with brussel sprouts, topped with two poached eggs, cheese, roasted poblano sauce.
(The original plate was carnitas, homefries, and tater tots)2 -
I like to mix up my food so it may not look as good as it tastes, but this was good. 1/2 lb of bacon including all the grease plus coconut oil with jalapeño, a 10 oz bag of fresh spinach sautéed in then 3 eggs scrambled in and finally melted in some mozzarella.

Here is my breakfast today:
2 hard-steamed eggs, 2 slices chopped ham and courgette spaghetti with philly cheese melted in.
YUM!!
I also drank a glass of savoury lassi, with 1tbsp of Chia seeds....0 -
I made Pork Chile Verde using my Instant Pot and this recipe from the one and only Kenji Lopez.

I served it over cauliflower rice with half a roma tomato and a few black olives. This meal worked out to be just a smidge over 10 grams of carbs per serving. I'll get six servings from this recipe. I could make it lower by choosing lower carb sides or skipping the cauli rice, but I had enough for the day since I wasn't hungry until about 2pm today.
My husband is headed to New Mexico tomorrow and promised to bring back some Hatch chiles. I can't wait! I used Poblano, Anaheim, and a few too many Serrano chiles in this dish.
Lunch today (no photo) was pimento cheese, celery sticks, a few salami coins, and 1/3 of a proscuitto panino, which is mozzarella wrapped in proscuitto.

Fried some bacon and removed from grease. Added chopped brussel sprouts to hot grease. Sautéed until soft and added crumbled bacon back in to them. Added some black pepper and plated.
Braided Mozzarella cheese in olive oil with spices (found at Aldi's). Very filling supper1 -

I forgot to take a pic of my dinner last night. I did my regular egg scramble with sausage, jalapeño and cheese, but this time, I used duck eggs. The yolks are larger, they fluff up more and have a higher percentage of fat than chicken eggs. As far as taste, I couldn't tell a difference. However, if you want higher fat eggs, duck is a good option. I buy my eggs from a lady at work who is now adding duck eggs, so these may become a regular thing for me.0

Ribeye steak, seasoned and fried with some butter. The side is a wilted spinach & kale salad, dressed with the leftover butter from the steak mixed with some hot sauce. It was good, but I used too much butter.

Breakfast was BPC.
Lunch was a boiled egg, half a prosciutto panino, which is mozzarella wrapped in prosciutto and rolled up, and some green olives.
Dinner was an omelet with diced peppers, tomato, jalapeno Havarti cheese, and a sprinkle of chives. I had a few oz. of smoked pork butt on the side.
I have enough carbs left for a snack tonight, so I'm thinking it will be a square of super dark chocolate with a tsp of cashew butter on top!
