    I'm proud if my progress in the kitchen able to cook and create meals to my satisfaction. My zucchini lasagna came out too salty so I had to throw it out. I hate trashing food but I could not eat it. So I made a stove top pan veggie lasagna (spinach instead of pasta noodles) proud to say this time it was perfect. It's keto friendly and low carb but high in protein which is what I needed
    Made so California blend vegetables to go with now I have my meals prep for dinner this week.

    Going to have my sister make me chicken croquettes for lunch this week. Switching things up so I don't get bored with my food.



    My zucchini lasagna always comes out too watery. Last time I made it my niece suggested putting salt on it when I let it sit and then wiping the salt off before I cook it. Well mine too came out too salty. I guess I didn’t get all the salt off. 🤪 I still ate it though. Lol. I love zucchini lasagna. One of my favorites.

    @vicky2767 I don't make zucchini lasagna because well I'm too lazy to deal with the watery zucchini issue, but this lady has some tips on how to do it and I think the grill option would work the best, I like to grill my veggies now and I can tell you that the zucchini doesn't come out watery when I grill them so it would probably work and it only takes a few minutes to achieve grilled zucchini.

    Last night I was heading into bed, lost me balance and hit my back into the corner of the wall and then hit the floor face first. Ouch! So, they got me back into dr for Friday to adjust my settings some more. So I will be taking it easy until then. Since I can’t move much anyway. I’m so sore. I will get there slowly. But surely.

    Oh my goodness I'll pray for your speedily recovery. I myself experience dizziness from side affects of a lot of my meds so I totally understand.

    Here we go. It's funny before I would've be depressed and start to spiral down into emotional eating. But since working the triangle in this journey I have a healthy mindset to go back over my week and figure out what I did and change it up so I'll have another successful week. My issue for this weight gain was eating too much unpredictable foods so I'm making enough prep trays so don't have this issue. Keep pressing on and staying positive.
