Food inspiration, or what's for supper?

Well my second half is still in the fridge... and my "snack" was 400g of apple exactly... as someone else got the "remaining" apple...2

@Athijade .... I think you should always have a bag of salad around... because bunnies are important!
I know... and it makes a great fast lunch or dinner. I also always have cherry tomatoes on hand because I LOVE snacking on them.
I am having the salad with the pot pie tonight. Lunch will likely be a frozen meal or some soup. Soup actually sounds really good. Maybe with a side of cherry tomatoes and cucumber. Gotta start focusing on those bunnies!

Good advice Athijade!…I always have yogurt, breakfast bars, tiny bags of almonds and string cheese within reach!…recently I started buying tiny boxes of orange juice ( 110 calories ) so I don’t consume too much…it is nice to feel good about this again!2

I’ve wanted tacos for days. Been thinking about them every meal I’ve eaten and wished they were tacos. So today that’s what I made. I exercised for 2 hours this morning and had a lighter lunch. I substituted black beans for the refried beans. They are more filling for less calories. My tacos were amazing! Exactly what I wanted. Now that rat can go back in it’s cage.6

So much food inspiration here… I feel about 1,000,000 miles behind… and I love that 400 g apple PAV 🍎 you always find the greatest ❤️3

I logged all my food yesterday so that is a win. I also logged my breakfast today even though I contemplated just skipping today. I needed a comfort drink so I went to Starbucks and got a white hot chocolate. Should have just gotten a tall, but I got a Grande. Oops. That is what happens when you want the comfort drink and are super tired and not feeling your best. You don't make the best decision.4

I have been hungry for something spicy like tacos, too…the last few months there has been very little cooking in our torn up house including no stove for ten days!….I bought two medium size electric skillets and they have come in very handy…this afternoon I dug around in boxes searching for a big bowl for salad…I finally came across a big soup kettle an I used it for the salad ( where there is a will, you can find a way )… I am going to brown some lean ground beef in one of the skillets and make huge Taco salads for dinner…I have all the veggies, kidney beans, light sour cream and a really good quality sharp cheddar cheese to top it with!…I am really bad about hoarding my food all day and getting too hungry…( trying to change this bad habit )… I had an apple and two roast beef roll ups for lunch so I still have way too many calories for dinner and snack…and I HAVE to eat all my calories or I will be starving and feel cheated tomorrow!…4

I still find apples quite useful when applying a deficit... especially when deployed while preparing food or about 30 minutes before "food"... sure the calories may look high on paper but I feel like they save that and more when actually eating the rest of the meal.3

nothing great happening here today. got some orange flavored coffee which "made me" dip into some dried orange peels (covered with icky dark stuff that no one other than me would want to eat ) followed a while later by a can of tuna & corn salad for early lunch... but I did nuke some bunnies! High cal bunnies because I need to go get freezer supplies and that's all I had... so 500g baby peas and 100g onion. Now ready and waiting for further deployment!4

I shared my apple with two “ starving” doggies!…I swear the beast Willow eats like a goat!…she can digest almost anything she eats…the princess Roxie is not very picky either!4

I agree on the benefits of apples front. That's something I learned from you PAV otherwise I didn't think they were worth the calories. But if applied properly they really do stave off over eating3

Going through my recipe box on here to see what I used to eat when I actually buckled down and lost weight back in the day. I had actually gotten under 200lbs back then and felt great. I was also a lot younger and had more support so that helped. I put the weight back on after my mom passed away due to severe depression and PTSD. So I know I can do it... I just don't know WHY I am struggling so much now with it.
This weeks meals:
Pot Roast, carrots and onions, and mashed potatoes
Loaded baked potatoes (light sour cream, cheese, bacon bits, and broccoli)
Spaghetti with either a side salad or steamed broccoli
Working on next weeks meal plan too. It's Samhain so planning my feast while still trying not to go overboard.2 -

The reason I came back is because I was just so tired of being tired…every day is a struggle but every day I am in control of what I eat is a huge victory!…and once you start building that chain of successful days and you can see your progress, things do get better and a little easier!3 -
Today was vanilla yogurt with Cheerios, banana and a sprinkle of dried cranberries. Filling and felt like dessert 😋1

hmmm... maybe that's what I should have (yogurt instead of a cliff bar!)1

Thank you for the encouragement Connie!
I had a pack of peanut butter crackers for breakfast only because I had to take my antibiotics and they make me super nauseated if I don't eat. Otherwise I have been skipping breakfast because I really don't enjoy eating in the mornings. Never have.
Lunch will be either chicken alfredo from the deli OR some leftover mexican rice and beans from dinner last night. Dinner will likely be spaghetti and steamed broccoli (so fancy). Which reminds me I need to get the pasta sauce out of the freezer. The jar I had was so big that I had about half of it leftover last time I made pasta. So not the healthiest of days, but I feel like step one is being aware of what I am eating.2 -
Sounds like a plan Athijade! I’m sorry about infection and antibiotics. Hopefthis round will work and you’ll feel better.2

This being unwell thing is definitely not approved.
Memo to us all: sickness and injuries ban to go in effect ASAP! 🤔3 -
I roasted a chicken last night and made some glazed carrots and cornbread dressing. SO good. One of the best roasted chickens I have made and the dressing was the perfect balance of sweet and savory, especially with some gravy. If I don't eat it all, I may try and freeze some into single meals.

Good work, Athijade! Maybe PAV can visit you and add roasted chicken to his menu options????
I went a bit crazy tonight and had RED soup for supper with some mozzarella and corn chips. Perfect for our cool weather. (Hope the green soup didn't see this )2 -
Does red mean go?🤷♂️🤔0

I meant for "cooking" lessons more than visiting you for dinner 😁

Red Soup - little black beans, tomatoes, carrots, lots and lots of spinach, red peppers + a tin of chipotles. Perfect antidote to the cold damp yesterday 🔥2

Black beans and Spinach---> red?🤔
Green soup is more green than red is red!😎0 -
We went to a kosher deli for lunch today after hubby’s cardiologist appt. He got a clean bill of health. To celebrate we had pastrami sandwiches on marble rye with good brown mustard - small ones but still….. Not too calorific but evening meal was light to compensate.4

Yesterday was a tbone steak, baked potato, and roasted zucchini for Samhain. I only had about 3/4 of the steak and half the potato so will be making steak hash with eggs tomorrow night. Tonight will be more of the leftover chicken.2
