Late supper …. Homemade Beef Nachos - made with cheddar & Parmesan …. Bit faffy! - topped with spring onions, avocado, cherry toms, sour cream & coriander!
for under 500 kcals … Nachos not very crispy 🤔

I am not sure I will be attempting Ms. Tea's Tacos tonight!
BUT, a note of CAUTION to anyone else attempting to replicate Ms Tea's nice looking cauliflower rice lunch!
Ms Tea neglected to mention that one should NOT pre-mix EVERYTHING before frying it! IF you do… you will end up with FRIED RICE!
As a FREE SERVICE by the "EXTERNAL TROUBLESHOOTING SUPPORT TEAM: FREE COOKING ADVICE BY ACTUAL COOKS FOR PAVS EVERYWHERE": FIRST start frying the cauliflower and other ingredients… THEN add the egg and cheese mixture on top to achieve a NON fried rice end result!
That said… the fried rice was pretty good anyway… so THANK you for the idea Ms Tea, even though I failed to execute! :)
500g cauli rice, 27g onion, 35g black olives because I wanted to finish the jar and get it out of the fridge, 45g Kirkland old cheddar, 12g Lactania "Provençal butter with garlic", 4g lemon pepper…
(unlike Ms Tea… no trouble finishing it all up w/55g bread, 33g sriracha, 26g prosciutto while preparing it all (under the guise of "let's clean up the fridge), 64g green grapes, and 119g banana! — definitely NOT hungry at this point, so probably a good time to hit Costco if I can get myself up from my chair!)

Just an odd question that comes up often - how is it that “normal” weight people have no problem chucking food that sits too long in the fridge. Yet chubby folk tend to “finish up” (EAT) the almost expired or partial jars, containers or odd bits of food. Under the guise of cleaning the fridge or pantry. Or the thought is no point refrigerating the dabs of leftovers.
I’m all about not being wasteful but there seems to be an element of guilt or compulsion?

Beyond a doubt there is an element of truth in your observation. In actual fact, CCCGG is still on my case for "throwing out food" or "not finishing what's on your plate" — practices baked into her brain by her mom and grand mom—just as the same conditioning was hammered into mine by my own mom and grandmothers. In fact it was one of my "rebellions" when I started losing weight that I started giving myself permission to not finish or throw out…. not that I always do so… but at the very least it does happen occasionally. And it definitely applies to eating out just as much or more so!

I find frugality in the kitchen is back since skyrocket inflation returned.
The grands came up through the great depression and war rations, so they delightfully baked goodies after sugar was available again - but still no waste, crumbs from the cake pan were crumbs on the next mornings coffee cake…
Mixed meat pasta bowl with fresh diced tomatoes and wilted spinach.
Tonight, sauteed a large pan of rough cut sweet onions & bell peppers. Divided and used some when 97% lean ground beef & turkey was cooked, reserved some and used for hubbys morning non-egg naan pizzas.
Reserved some for lunch soups and salad bowls the next few days, and some to stirfry with some frozen cauli-rice and asparagus blend vegs for my (non-egg) breakfasts.
Still waiting for egg prices to return to sanity.

Just spent the price of 4 loafs of bread or 6L (gallon and a half) of milk on 12 eggs!🤯

Nods... i've gotten a bit stubborn creative on egg alternatives. Reading today about non-egg binder ideas for things like meat loaf (for the red lentil patties I want to make.) I was surprised by ground flax and chia seeds. The oils, clarified butter or mayo not as surprising. Yogurt, oatmeal were other ideas.

I do feel terrible when I chuck food away …. can also be guilty of clearing out the fridge of foods past their best too. Sure this is part - just a part, but a possibly a significant psychological barrier… food for thought as they say!
Frying cauliflower rice? I did not even know you could 🤣… I nuk mine, 6 - 7 minutes on high….

Yep, still on the hunt for the red paste... next out and about shopping - there is a store for restaurant cooks my db mentioned. Want to visit that and another store I haven't checked before.
Our regular ad this week had very few 'real food' decent sales this week. Waiting for the next sales that start each Wed.
Made a turkey breast for Easter. The defatted pan drippings are so flavorful - love it for soups.
So, thawing another one to cook this week, then will clean freezer out to make another big pot of broth.

Made (tried to make!) a cheesy polenta - have a glut of cheese in house to use up! I don’t think polenta is for me 🤢😬

So @yakkystuff is this a new turkey breast to be eaten and then souped, or are you just rendering into soup the already cooked easter turkey?
My easter turkey is long gone but I never did freeze it! drippings were, indeed, really good for soup. Hard to truly come up with the correct number of calories… a lot depends on how effectively it was defatted!
My wallet did not survive costco… club house lemon pepper hard to find AGAIN. I think I will order from Amazon :(

Thawed today, cookin tomorrow, oven roast (same as one we did for Easter), then will raid freezer for stashed remnants and make a fresh pot of broth - inspired by yours this week ;)
I have a giant pair of stock pots that can yield 3 to 5 gals, depending on my bone stash. This one will probably be small, maybe 6 to 8 quarts (not condensed ;)

Ok Q - anyone use lemongrass in your curries/cooking?
Listed in a recipe to make red curry paste. Now I'm wondering about that too (seem to have shiny object syndrome going on from diving down rabbit holes, lol)

Not used myself either. That red curry paste is so easy for me to find and so cheap and one packages lasts a couple of months. Can't imaging making it. You are an inspired woman, Yakky!!!!

Never spent this much time daydreaming/trying to figure out healthy food - like all i wanted to try was something with red lentils, led to curry, to coconut milk, to red paste, to lemongrass, — all which is just mental pursuit to try red lentil curry at this point. Getting utterly frustrated tho, and may ditch entire pursuit.

Have used lemongrass before, can’t remember when or what in .. sorry! Red curry paste is on supermarket shelves here, but I’ve never had a recipe to use that in either… not very adventerous here 😬🙂

I used to have some super nice egg white chocolate mug cakes that I used to make in the microwave.
The important part was equal weight of egg whites and unsweetened apple sauce… the cocoa and the rest were somewhat negotiable. Never could figure out whether the baking powder made a difference though I think it did. But you would not be able to take them out of the house like muffins. They were a great breakfast and nighttime desert served hot! For sure the macros (and quantities for the calories) were a kitten of a lot better
than

sugar infused cocoa covered caramel sauced peanut stuffed bars that may have the words Oh and Henry printed on their outside packaging.

That sounds interesting. Last night's birthday friend was very particular. SHE sent me the recipe to be used :) I seem to have some very particular friends - quirky bunch of weirdos who I love so much!

50 to 100g egg white, 50 to 100g apple sauce, knife edge baking powder (1g or less🤷🏻♂️), start with 5 to 10g of unsweetened cocoa and adjust, drop or two of sucralose. Could use chipits but calories could be affected. Could use sweetened/flavoured apple sauce. Make sure there is more than double space. Nuke starting at 1 min full. I seem to recall larger mugs and 1 min at 1500w and 1 min at 50% for the extra time. I don't have egg whites otherwise i would fire up a trial one

Haha, my SIL always adjusts the recipes I suggest to bring ingredients and cook at the holidays with the nephews… knows what she/her family likes… it's ok... i'd rather accommodate that than not. That time flew bye bye and they have moved away to another state for jobs… good thing technology is so available now.... much better than snail mail back in the day when I moved away briefly - next thing I knew, grams & gramps headed my way to make sure all was good thereabouts! Friends & family, gotta love 'em

Dinner was worth the wait. Turkey breast roasted, 12" pan mixed potato & vegs, a few small sliced rounds of chicken sausage breakfast links, dressed with can diced tomatoes, can of chili, rough cut sweet onion & bell peppers, spiced and a dash of Hickory bbq sauce.

The banana and blueberry muffins became a tried & trusted banana and sultana bread… the blueberries in fridge had gone way bad to use up! Some looked like were wearing furry hats ( 🤢🙄)
Also not enough almond flour, but plenty of plain flour & blueberry recipe called for 12 eggs ….. sounds unworkable to me!
Oops …..Two slices later ….. 😬😬 … one of my colleagues bought in some coffee and walnut cake too ….good job don’t go into office very often 😬😬😬Going out with NHS Laura to find some of those cals after work tonight 😉
