641 Calories. More than SIX bunnies. 68g of protein.
Expensive given the price of eggs and turkey and let's not forget the processed meat penalty unless you bake your own turkey like @yakkystuff did… but ok for once in a while I guess! And tasty it was :)

In case anyone else is wondering other than myself when I noticed it, I start my day with my target being = Mifflin RMR (1479) Then Fitbit activity calories get added. Then because Fitbit has not been transmitting ALL the calories since late August 2024, there is a manual adjustment of up to 579 Cal max to equalize the two at midnight! I usually count on that to pull back into range or carve out a deficit… so I haven't been too keen to try and troubleshoot the problem!🤣

Someone cabbaged my Tx toast, so made garlic bread for supper with my leftovers from last night.
Thawing some chicken breasts for tomorrow night and awaiting inspiration, lol

Courgetti = zuchini? Is that spicy zuchinni sliced??? Sounds good :) I would skip the prawns.
Last night's supper for me and my once BC friend was simple but really tasty. Sometimes it is hard to share a meal with her because she tends towards take out meaty sandwiches for her first choice.
But last night we had asparagus (pan steamed) with a wee bit of olive oil and feta cheese +extra firm tofu panfried with soy sauce - simple but tasty too and friend even like it which I wasn't really expecting. Later (because they took a while in the oven) we had baked potatoes - me with 4g of butter and 30g of sour cream and chives from the garden :) The potato toppings added some calories - but so delicious and overall a good bang for the calorie buck :)

Need to hit you for firm tofu ideas! I bought a huge block from Costco and even have frozen edamame in the freezer!!!🤯🤯🤯
And I out Lauried you last night!!! The new toy WORKED! A bit hard to clean. But a mandolin that doesn't slice ME! (more on this later)
Sliced up "courgettes" aka zucchini squash 😛 and thick "julienned" a red/purple carrot. Covered with spinach / cheese pasta sauce (was expiring) nuked it... and went at it!
Not bad at all, esp for the calories. Have 50% left for today!
(Added one slice of bread to wipe the bowl 😛)

Yeah, courgetti is spiralised Zuchinni over ‘ere! I love it! In the spicy “sauce” - is just lemon , juice, red chilli with fresh parsley garnish… I think you could do without the prawns! I bet asparagus tips could replace them?
Wish I could cook tofu …always comes out tasting like cardboard!
Forgot to take some fish out of freezer today🙄… so as I was visiting MIL, went to supermarket & bought some ready made meals for tea …. Had fishcakes, mash & green veggies! Was alright, cheap as nearing bbd’s, fairly quick & under cals!2 -
Look at you go, PAV! I'm going super simple with the extra firm tofu - sliced about 1/4 - 1/2 thick - in the frying pan, good dose of soy sauce, lots of flipping so it doesn't stick :) Then with some sort of sauce - that is calorie heavy - but makes it delicious :) Memories of Thailand or, last night, some peri-peri hot garlic sauce :)
I agree on the yoghurt front, usually, but I pulled tofu for dinner on the poor woman - not sure I could have won her over to yoghurt on the baked potato too :)1 -

yup - it really really wants to stick - but I just flip and flip. It really doesn't take long so it is not a big deal.

1264 for "main meals" which has me well on my way to a 2K day with a slice of bread and a king size double candy bar ;-)
BUT…. I've had a good lunch AND I still have 2/3 of everything left for dinner!

Nope, 3c & bit over 500 cals dinner. Cheese and noodles adds up fast! I find soup soothing.

I brined chicken breast (pounded thin) with chipotle, garlic, and black pepper, then seasoned with a BBQ blend spice mix and grilled quickly. Super juicy.
Also made a quick coleslaw with shredded cabbage and a lemon vinaigrette salad dressing I had in the fridge.
Earlier today I had a large coffee for breakfast with half a high protein vanilla shake.
For lunch I had 3/4 cup cottage cheese with 2tbsp Picante salsa and half a bag of quest Loaded Taco chips crushed up in it.
Had a key lime yogurt for a snack.

That chicken dish sounds lovely ….How long did you brine the chicken for? I’ve brined meat before with water onto dry fried corriander, garlic, bay,with lemon, sugar and a bit of salt; brined for 8 hours though?!

I had pounded the chicken pretty thin, so I only brined for 2 hours. If I am brining something like a whole turkey (which I did at Thanksgiving) or a pork butt/shoukder, I go overnight, so 8-12 hrs.
Brining thinner cuts of chicken or pork, I keep it shorter, or it can conversely toughen the meat.

2 cups of coffee with just a bit of half and half
Strawberry lemonade protein drink
Cottage cheese with cucumbers, tomato and onion. Seasoned with red wine vinegar and s/p/g
Small grilled sirloin steak with sauteed mushrooms
Key lime yogurt.
Chai with milk

Picked up more shrimp, $3/lb. Considering trying sumptin sumptin with coconut milk for a alfredo type dish (instead of regular milk.)
