Try these shortbread cookies: 2 cups almond flour 1/3 cup baking sweetener of choice (I prefer Splenda) 6 tablespoons salted butter, softened 1 teaspoon lemon zest 1 tsp vanilla extract Mix together well using a mixer. You want everything incorporated. Place on a sheet of parchment paper and shape into a cylinder. Roll up…

30 minute fall-off-the-bone pork ribs from scratch. I put together a dry rub of garlic and sage, and oh. em. gee! They were good! If you want to know HOW I made pork ribs from scratch, the answer is the Instant Pot pressure cooker.

My cholesterol levels went up in direct correlation of my estrogen levels going down.
-
LDL can also go up independent of your diet. Drop in estrogen made mine spike. High LDL is why I started this WOE (dr recommended).

@ettaterrell Earlier in this thread I posted a side by side before and after pic. It's probably way back. This is a follow up. Thx!

I'm 7 lbs to goal and, at this point, weigh loss is so very slow. Instead of 1-2 pounds a week, it's more like 1-2 pounds a month. Most weeks, there's no change at all. I think there are two reasons why reaching goal weight triggers weight gain in some people. The obvious is dietary change. The other is muscle loss. When I…

I'm sure keto would have worked for him if it came with a steady stream of income for him. Meanwhile, the pharmaceuticals continue to line his pockets. Sad when doctors aren't really wanting to help patients.
-
Within 7 lbs of my final goal! 8 months on keto and over 60 lbs down.

I wore a bikini last Sunday!

When I made fried rice, I put fried Spam in it. Yummy! A little bit with a scrambled egg is good, too.

Cook regular food from scratch that's naturally low carb. Meat, poultry, vegetables, make a salad, you know, normal food.

One step I'm taking is to quit BPC, eliminate coconut oil, and use olive oil when possible instead of butter. By May, I should be at goal weight and can add more foods that help control and reduce LDL. There's definitely a link between early menopause and CHD and stroke, so there's a real concern there.

Hmm...that's interesting. I'll look into this relationship further. Perhaps it will level out as the body eventually adjusts.

I meet with my primary care on Wednesday. It could be that my higher LDL has nothing to do with my diet. Previous cholesterol levels have always been perfect with high HDL. Last October's labs were the first time my LDL levels were elevated. Ever. And that was before I started this WOE. Perhaps it's because I hit menopause…

The I believe the "good" stuff is the HDL. @reblazed Thx, I'll look into that. @RalfLott I'll check with him for more info. Thx!
-
Thx. I've also learned that it will interfere with thyroxine, which I have to take. Part of me wants to wait another 6 months to see if the LDL levels out once my weight stabilizes. I'm just 9 lbs away from goal.

What's ApoE4? The Alzheimer's gene? I'm pretty discouraged, but am reluctant to give up this WOE. I also don't want to start on statins.

I've been eating keto for several months, and have been within 15 lbs of my goal weight for weeks, now. I just did an 18 hour fast. I had bulletproof coffee for breakfast, then a hard boiled egg around noon for lunch, then fasted until the following morning. I lost 1 lb the first day, 1 lb the second day, and another half…

I drink a glass of Crystal Light and a splash, and I mean splash of Toto's Handmade Vodka. And I nurse it. I can have two drinks in an afternoon and must hydrate, or there's trouble. I've always been a lightweight, so that's nothing out of the norm. =)

I just had blood drawn today to check cholesterol. I'm excited to see the new numbers, hoping they're not scary. I'll post my comparison as you did yours. My last lab work was in early October. Yours look great!

I'm going to venture that hyperthyroidism is to blame. I experienced hyperthyroidism in December two years ago and in 3 weeks (before the thyroid burned out and went hypo) I lost 20 pounds. I wasn't keto then, and it took me by surprise. My point is, if you know you're hyperthyroid, I imagine this WOE would augment the…

Yay for the great news! Well done!

You can't, but if you continue to stay with this way of eating, and continue to have great results, she may end up joining you. My carb-addicted husband joined me after he saw my progress without me ever suggesting he try it. People have to make their own decisions. There's so much UN-learning we have to do to fully accept…

Won't have my levels tested for a few more months. It seems odd because the thyroid rarely repair themselves, but who knows? If love to be off the thyroid med.

This was my snack. made it last night.

My doctor recommended low carb, then I took it one step further going keto. She knows and supports it.
-
I'm Keto, I'll send a request.

Stories like yours keep me on the straight and narrow. I swear, I'm "scared straight". I do NOT want to feel like crap. I do NOT want the scale to move in the wrong direction. Besides, I've already gotten rid of my fat pants.

A long time ago, when I was doing South Beach, the proctologist told me after a coloscopy that the diet was bad for my colon and I needed to eat a lot of bran. So I did and gained about 25 pounds. What an idiot.
