my favorite go-to meal that's super easy is a veggie, a carb (potatoes, quinoa, or brown rice) and a veggie meat. Burritos are a great option just throw in rice, beans, corn, and peppers :) Tofu with general tso sauce over rice with broccoli and carrots.

Look up vegan recipes on pintrest! Two of my favorite dishes are general tsao tofu with rice, broccoli, and carrots :) Also love burritos with a hummus base, beans, rice, corn, tomatos, and lettuce! Another great website to find recipes is thefriendlyfig.com

Oh, for sure! I do enjoy tofu & vegan chik'n strips as they help get protein in. :) I just know that for me, personally, while I love the vegan cheeses, frozen meals, etc., when I ate them a lot I gained a bunch of weight!
