SkinnyGirl Poppyseed dressing - sugar free and so flavorful. I put them in a ziplock bag with fat free italian dressing overnight. I'll usually season them a lot of different ways once they are on the pan. I love a poached egg over anything with tomato sauce. The combination is fabulous and the runny yolk makes the spaghetti sauce so creamy. I have spaghetti squash mixed with sautéed onions and mushrooms and light spaghetti sauce in the fridge now. I think I'll top it with a poached egg for dinner tonight. :smile:

I like either a romaine or spinach salad with sliced grilled chicken and hard-boiled egg whites. You could add other sources of protein to it, like low fat shredded cheese and some black beans.

Today is spinach salad with rotisserie chicken; garlic-seasoned brown rice & quinoa; and pretzel crisps with a laughing cow swiss cheese wedge.

Mine is baby spinach with 3 oz. diced rotisserie chicken breast, cucumbers & tomatoes and fig balsamic vinegar. I also have a banana and a Babybel light cheese, though those are likely to be a late-afternoon snack.

I like to cook a turkey breast or spiral ham on the weekend and slice. I bag the portions individually and then put all of the small bags into a larger one that is labeled with what type of meat, how many oz in each baggie, and the date I cooked/froze it. You can easily bag in family-size portions and label accordingly.…

Today, I have a green salad of romaine lettuce and grape tomatoes. I brought some "mock turkey chili" (ground turkey, black beans, corn & salsa) to put on top. I also have some shredded cheddar. Snack is more grape tomatoes cut in half and drizzled with fig-flavored balsamic vinegarette and some sliced cucumbers.

Thank you for the reassurance about peeling them. I'll try that with the batch I cook this Sunday. Oh, and I LOVE the idea of cooking them in the oven. I'll research that further - not sure if I have to put water in the muffin tin? Or spray with non-stick before putting the egg in there?
