Turkey chili is one of my favs. With plenty of sides (fruit, cheese veggies). Also sandwiches. And leftovers. Today is a turkey and spinach sandwich, sides - 1/2 cucumber, cheese, strawberries.

Today, I have a green salad of romaine lettuce and grape tomatoes. I brought some "mock turkey chili" (ground turkey, black beans, corn & salsa) to put on top. I also have some shredded cheddar. Snack is more grape tomatoes cut in half and drizzled with fig-flavored balsamic vinegarette and some sliced cucumbers.

I bought a rotisserie chicken earlier in the week for chicken enchilada stuffed peppers so it's been a very chicken-y week. Today I have leftover creamy chicken soup (that I made with homemade stock + 1 can of Cream of Mushroom, frozen veg & wild rice) and half an avocado chicken salad sandwich.

I usually bring a cup of unsweetened apple sauce & almonds if I need a snack later in the afternoon, but I probably won't today.

I'm pretty traditional at lunch; I like sandwiches, salads, and soups. Today I picked up a banh mi from a local sandwich joint, but I usually go with turkey or chicken and cheddar on a sandwich thin at home. For salads I do your basic greens/chopped veggies/protein mixes. Soup comes from a can, and I add frozen veggies most times. There's no need to overthink it.

I like to do turkey wraps or leftovers from the night before. Typically grilled chicken and a salad with lots of greens.
