Eating salmon wrapped in nori or lettuce = bomb! And then eat some sweet potato "chips" (I roast slice of sweet potatoes in the oven to make chips) and sprinkle them with eyrithritol! YUM!

My favorite dinner idea is roasted salmon, roasted sweet potato slices and spinach. I eat the salmon and spinach first and then I eat the sweet potatoes sprinkled with erythritol - like dessert ;)

I had a delicious Keto Treat this evening... Coconut milk ice cream. Threw a can of coconut milk in my ice cream maker and let it whirl away with a scoop of vegan (sugar free) protein powder (Sun Warrior) and some erythritol. Friggin' perfection! Ate the whole thing and loving life over here! ;)

Canned Seafood in Water or Olive Oil are GREAT choices and easy to slip into your diet! Mix them with avocado or sun-dried tomatoes pack in olive oil. SO GOOD! Forget the mayo - think outside of the box! :)

Too much fiber is not necessarily a bad thing, unless you start feeling sick, get bloated, gassy, etc... Then you might need to cut back. But it's recommended that you get about 30 - 35 grams of fiber per day.
