Have you tried a reverse grip on the bar? This will help with the rolling. Your grip strength will continue to increase week by week. I found that pullups and hanging leg raises help too.

Since you are exercising 6 days per week, I would set your TDEE activity level at "3-5 hrs/wk of moderate exercise". Using TDEE you would not log exercise back in. I lost 60 pounds (size 20 to a 12) with cardio and minimal bodyweight exercise. I then added heavy lifting with cardio and lost another 40 pounds (size 12 to a 6). My body looks tight and lean because of it. I certainly don't think it was a waste of time.

Buffets are hard. That being said, you can get through this. Fill up on fruits, vegetables and meat. Limit your portions of refined carbs and starchy carbs. So instead of a heaping spoonful of mac n cheese, if you really like man n cheese have just a little bit. This may be an evening that you may have to go "off the grid"…

My mom has been struggling with this as well. I encourage you to strength train and eat enough protein to maintain / increase your lean muscle mass. Also, limit your refined carbs - pasta, white bread, sugar, etc.

While your goal to get to a healthier weight is admirable, putting such a stringent time limit is unhealthy and dangerous. Not to mention unsustainable. For the time being, try deadlifts with dumbbells. The smith machine is helpful in place of a pull up bar. Locked in its highest position you can do pull ups or even attach gymnastics rings to do rows and dips. With the bar locked in a lower position, you can use it for inverted pushups / row.

That is awesome! Congrats! A quick way to defrost frozen meat in a hurry is to place it in a sink of room temp water. Depending on the quantity of meat, maybe about 1/2 hour or so.

I set my calorie goal based on TDEE and I do not log exercise. I was having a hard time eating back my exercise calories the MFP way since I wasn't always sure which days I would be able to work out. I don't enjoy working out in the morning and sometimes a project comes up at work where I can't work out a certain evening.…

I try to get fat, protein and complex carbohydrates in each meal. So yeah, bring on the fat (just not the trans fat).

What are you doing for warmups / stretching prior to doing the shoulder presses? How many reps do you do in each set with the 15# DB's? Do you start at 15#?
