Certain anti-anxiety drugs make you crave carbs like crazy. Like seriously cravings so strong I can't even describe them :)

A reasonable amount (like 15 mins per week) is beneficial in many ways. I've been doing it for 20 years.

You're probably fine if you're consuming less than 100g of protein per day. More than that can cause gastro-intestinal issues (from what I understand). I'm not an expert though! Oh, and most granola bars are evil - not healthy at all and loaded with sugar/corn syrup.

Are your TSH levels good? I find that when mine are 0.6 - 1.0 I feel the best.
