  • I do this alott I cook my chicken in v8 juice with onions and garlic. And sometimes I use bonless skinless chicken thighs. I always cook a bunch and weigh it out and freeze it in 4 oz portions. Then if i am short on time it is ready and I use canned enchillada sauce. My favirite is La Victoria.
  • take fat free cottage cheese and blend it until smooth. add a package of fat free ranch dip. Now you have ranch dip that is only 35 caloies per 1/2 cup.
  • You can do it if you put your mind to it! Just yell out for help if you need it.
  • No but if you do you might need to adjust the cooking time, it migh take a little longer. Just start checking it after 45 minutes and if not done check every 5 minutes. Might also be good to do in muffin tins.

  • Are you a vegetarian? I dont know that you are doing anything wrong, but It looks like a lot of carbs. Maybe try to get carbs more from veggies and eat fresh fruit inplace of the canned. Your body will have to work a lot harded to prosses the fresh. Also what is your calories from all that?
