  • Oh wow, I didn't even think of mushroom wellington - I've never had it but I (and my family) love mushrooms so there may be some way to get that to work. Or the ratatouille/ bean salads sound like options. Thanks for helping my brain go in the right direction!

  • As an alternative to birthday cake, what about a raw vegan cake? They're usually made out of fruit and vegetables, they're still cake and tasty, but they won't have the flour and processed sugar. Google "raw vegan birthday cake," there's a ton of recipes out there. Happy birthday!
  • I also bake homemade muffins for the week over the weekend - they really don't take very long, and if I'm totally out of time in the morning I can throw one in a baggie and eat it at work.   • I wonder about that too. It seems if I have 2 fruits in a day I always exceed the sugar amount. I'm guessing it isn't too bad, because it's natural sugar? I'm vegetarian, so I've often gone over on the fiber, Vitamin A and C, too.
  • I don't think diet sodas are all that great for you. And you know, if you're drinking them because you like the refreshing fizziness, seltzer is just water with carbonation. When I'm in the mood for fizzy drinks, I drink seltzer instead of soda.
