I ended up having a 3 minute English Muffin (made with almond butter) and Kerrygold butter.

I don't eat the same things every day but I definitely have a small rotation of things that are familiar and I know how they work into my day. For example, I don't have tuna salad every day but when I do have it, I know the exact ingredients and how to log it.

I made a quick one last night with full fat cream cheese, Swerve, and a piece of choczero melted in the microwave. It was like chocolate cheesecake.

In general lentils and most beans are higher in carbs than I can budget for. I was able to find black soybeans at Fresh Market and picked up a can of those to use in a Mexican dish I have coming up, so I will report back on the taste.

My doctor put me on low carb due to high triglycerides. He told me to eat fewer than 100g a day. Keto wasn't a good fit for me, but I wanted to do more than the doc said so I'm in between - 50-60g a day. I track mine, and I weigh many things (like cheese) when I have trouble telling how much to log. I don't, however weigh things like eggs. I log an egg and don't care if it's off 10 calories one way or another.

The best ones are deep fried, then put in sauce and baked for a bit to set the sauce.
