Fried foods and keto

I not only work the night shift but I work 12 hour shifts. I wind up with 2 "friday's" a week and my fridays tend to be around 20-22 hours long. My "sundays" tend to be 12 hours or less. So I'm assuming the whole 1,200 calories or whatever a day is for a standard 14-16 hours long day...is there some way for me to be able to figure out how many calories is acceptable for a longer day, like 22 hours? I'm joining a gym in the very near future. What kind of things should I do to start? I need to build upper body strength and I have back problems that I'm told will get better by gaining core strength. I also need to lose like 80 pounds.

I sprained my ankle yesterday hiking, then had to walk on it for like a mile and something to get back to the car. It hurt pretty bad, I went and got it checked out and they gave me Vicodin. I took it last night and OMFG I was ravenous! I wasn't even hungry before I took it!

After midnight
If you eat something after midnight do you count it as the next days calories? Lets say I went to eat something right now (12:58EST on 10/11), should that be tracked under the 10th's calories since I haven't gone to bed yet or should I count it as the 11th's since it's officially the 11th?
