Food inspiration, or what's for supper?

Sorry for disappointing you, my dearest PAV. But it IS sugar free!!!! And I have not actually purchased any - just browsed so far
Supper last night and today - egg foo young!!!! One egg dish I can tolerate. Only problem is my local grocery store rarely has bean sprouts. But they have the again.
Sorry for these measurements:
1/2 small bag of bean sprouts (maybe 4 cups?)
4 stalks of celery
1/2 red pepper
150 g cooked potato
green onions
3 eggs
Lots of sriracha
Shared some eggy bits with the pups.
Amazingly filling dinner! Embarrassed to say I don't have the particulars, because I did not log it (I'm at the eating moderatly - not logging stage of my reaquaintance to weight loss )

I've always looked at egg foo yung but never tried it. I am particular about eggs and I don't trust my local takeout chinese place enough for that, I think.
Seems like something I could make. I have hesitated to try eggs again after I got turned off them last time I ate them. I think about them alot though. I hate to go to the trouble of making a whole dish just to find I am still off eggs.2 -
make something simpler vs as involved to test?
Laurie I think there is "less sugar" shirriff lemon pie at safeway for $2.29 right now but it requires cooking. A quick look of the jello version said that you add the sugar. Which means you could add liquid sucralose at truly 0 cal... (granulated has calories due to the filler).2 -
seems like more than 'good nuff measurements How did you cook it? I don't see oil or spray? I would have managed to get it stuck even on non-stick!!!
Broke down and used "modern" methods: deep bowl, one of the spiny thingies also known as "hand mixer"... even has a "turbo" setting It seems that it does do a better job of convincing unsweetened vanilla almond milk to set with faux mousse powder as compared to using the hand whisk!
shirriff light lemon pie is $2.29 at Safeway. It is NOT sugar free. But I do believe that the jello lemon pie thingy has no sugar in it...2 -

Love, love love lemon meringue pie - but never had a sugar free one or made from a kit…. my MIL used to make ‘em; ahh … nostalgia!
Supper last night was salmon leftovers from night before - the tabouli - made with couscous - was even tastier one day later. Sucummed to banana bread last night

Supper was very good - too good! OH cooks a mean steak & mushroom sauce. Tonight going lighter …tried before - making courgette with haloumi & a tomato / olive sauce…is suprisingly tasty, though will have to add a pork chop for him indoors. OH actually stood on scales & he has lost over a stone too… so great news there!3

Salad for lunch and salad for dinner. Granted there was some meat/ protein included so not calorie free. Warm humid weather is upon us and it’s hard to get inspired for a hot meal.2

Poor air fryer is crying because of overwork. Started with 650g potatoes and 380g some sort of previously frozen South African type sausage. Plus finished the 745g California mix in the air fryer after taking out the sausage and potatoes....

That's what ms tea said! Mine had thawed because I put it in the crisper a couple of days back. Took a goodly amount of time (full time it said for oven use but I also added in the potatoes on top at the 15 minute mark instead of having them in the other compartment)0

I cannot remember the last time I cooked sausages maybe 35 years ago! But it was pre "air fryer" and I didn't have a convection oven then either, so probably in a fry pan, and I imagine they would have been from from frozen. Didn't eat them often - but kept them in the freezer for a last minute option ... I think????1

Well, I do have 26.67% of the sausage, 45% of my veggies, and a measly 21% of my potatoes from yesterday... so... LUNCH!
In deference to one who I still hope logs in and lurks on occasion, I've even plated everything in "no touching" mode!
.... everything that is, except some potato and veggie "shrinkage" that took place during the plating process.
Surprisingly(?) Cal count for what was HEADING for the plate was ~400 Cal3 -
Like them veg! Here was chicken stuffed with garlic mushrooms and wrapped in a bit of puff pastry, with shop bought nuked spring greens, savoy cabbage & peas with a knob of herb butter. Unfortunately, there has also been some dark almond chocolate & a McFlurry. 🥴🤭1

It was really good. I also had a small serving or air-fried shoestring fries and ketchup!4 -

Today's food:
Orange protein drink while at gym.
97% Fat Free hot dogs (won't be repeating these, texture was odd and flavor not great) and an ounce of reduced-fat sharp Cheddar.
Strawberries with an ounce half and half.
Two Good black cherry yogurt.
Fairlife chocolate protein milk.2 -
Supper tonight was new potatoes, carrots, peas, asparagus, spring cabbage air fried in parmesan, olive oil & basil. Was good but big on the carbs.

I tend to "count" the potato carbs (but not as carefully as processed carbs) and try to ignore the fruit and vegetable carbs. The numbers are there, but I don't think they are processed in the same way/as problematic as the processed ones? I wish MFP would differentiate between the two though.

Yes, I agree about the carbs in processed foods Laurie - I try hard to avoid, but you know 🙄🤭
I count them all still whilst trying to get this DB into remission 🤞🤞🤞
I don’t have to go so low on carbs at mo, though next DB nurse appoinment may be different again 😒… when HbA1c was 86, carbs were limited to 30g - max 50g per day - that was hard, got used to it & now guided to have around 50g - 75g, but in light of taking steroids, am allowed to be more relaxed - probably not this relaxed though 🥴😳
Supper tonight is a piece of rainbow trout - going to have a potato, fennel & dill salad with it.1 -
