I'm thinking of adding it to sugar free or fat free Cool Whip and then freezing. Haven't decided if I should mix with water first but I think I will because I don't think it will mix up well if not.

yes....I don't have a recipe, just make it the way you normally would but use parboiled cauliflower instead of potatoes. It's really good. I have not made the rice but the recipe is on several low carb sites and everyone seems to like it. I like it to make potato salad and next week I'll be using it to make "cheesy bread"

Congrats, I have to say though I love the before picture....we play Jump or Dive...you run to the edge of the diving board and someone yells "Jump" or they yell "dive" and you try to do what they say....so fun!!!

I like making cupcakes using one cake mix mixed with 1 can of pumpkin (not pie filling). Just bake according to cake mix directions. It's not sugar free unless you can find a sugar free cake mix, but it's good and satisfies my sweet tooth. I can't give you the NI because it will depend on the cake mix and pumpkin you use.…
