Plain and simple, you're miscalculating. It truly is that simple. Unless you're <100 lbs you're not gaining on 1200 calories. It's much more. Weigh all solids on a food scale raw/uncooked, measure liquids. Be super, duper accountable and accurate and make sure the entries you're using are accurate (USDA certified). Trust…

You are not logging accurately somehow. You would lose at 1200 unless you have some serious medical condition which would prevent that.

My TDEE is 14.35 x body weight. So when I want to cut, I just take 14.35 x body weight then subtract 15%. Weight comes off.

Join the "IIFYM (- The official if it fits your macros Fanpage!) group on FB (it's the page for the website). Ask for a macro check, the admins on there are super helpful and will sort it all out.

No it isn't... it's rather easily actually. I can pound down 5,000 calories easy. But all it takes to blow my weekly deficit is 3,085 calories. I can EASILY eat that. Half a jar of peanut butter (and I can eat half a jar of peanut butter, I've done it... gross), and 1 1/2 pints of Ben and Jerry's and I'm there.
