You have to soak it until no bubbles remain if you want it bitter free. Every time I have made it, there is no bitterness whatsoever. It's quite delicious!

I'm not sure what you mean by healthy, but I make these in mini muffin pans. http://mamapapabubba.com/2012/09/09/the-best-no-sugar-added-banana-muffins/ If you use really ripe bananas, they are plenty sweet.

I love that stuff! Just plain frozen bananas pureed. Lately I've been taking it and dehydrating it into fruit leather. I wondered if that the yonana machine was worth buying.
