My husband is vegan, so I eat a lot of vegan meals. While he is happy munching on a carrot here or a bag of unsalted sunflower seeds there; I want something hot and tasty!
I know a few great vegan recipes, but I could use some more that are tried and true to add to my repertoire. They don't actually have to be hot, but please make them tasty.

    This is a recipe for vegan gluten-free veggie burgers. I love these things. They freeze well, too. This is a recipe that you can adapt if you want - I'm going to add jalapeno to the next batch I make.

    Some of my favorites are:
    vegetable stir fry over brown rice- lots of recipes online
    coconut sweet potato curry- lots of recipes online
    yum bowls (basically chopped up green salad with beans (and sometimes rice) mixed in and a tahini/nut/vinegar/oil dressing)
    greek feast of fallafels, baba ghanush, hummus, veggies, and pita (I like mine with tsatzkiki sauce too, but that's not vegan)- lots of recipes online
    tom kha soup (with mushrooms instead of meat)- lots of recipes online
    veggie sushi made at home with nori, brown rice, avacado, carrot strips, and cucumber strips.

    i love to boil a pot of sweet butternut squash and then blend it into a thick soup! add whatever you want! salt pepper if u like but i add just salt free herbs and spices or plain as is... also check instagram , #whatveganseat @theminimalistbaker @nourishnotpunish etc and youll see more than youre eyes can handle!

    take a plain pizza base and add alot of tomato PASTE , then top with oregano and chopped mushrooms green peppers or whatever veg you like!

    My Whole Food Life has a ton of recipes that are great. She has an excellent 3bean & sweet potato chili that I LOVE!
    One Green Planet I just discovered tonight.
    Minimalist Baker was also recommended for me.

    I am not vegan but am trying to eat more plants and they are cheaper than meat so its a win win for me.

    I find replacing minced beef with lentils is and great start. Lentils are low in saturated fat and are filling. Different lentils have different texures and have different cooking times so experiment! Deliciously Ella has a good bolognese recipe in her book, I just adapt it to my taste. From this basic recipe, you can adapt it to make chilli, cottage pie (try adding sweet potatoes and other root veg to the mash for flavour) or lasagne (make a bechamel sauce with almond milk).
    also look at replacing meat with beans. I use all types of beans in curries and cassoulet to give a good texture and find they help to satisfy me.
    I find recipies on youtube and I just experiment. It's really important to use a good range of herbs and spices to add flavour.

    Go to BudgetBytes.com and check the Vegetarian/Vegan section. Some of my favorites are the Black Bean and Avocado Enchiladas (you can add cheese to your half!), Black Bean and Roasted Salsa Soup (I made a double batch yesterday!), the Weeknight Black Bean Chili (sub the veg ground crumbles for the ground turkey). She has a lot of other recipes that aren't as black beany (I love them!). Check it out.

    Also, I just bought a cookbook called Crock-Pot Vegetarian Recipes and a lot of them are vegan.

    I also really like chezbettay.com/. She has really good pictures and it's easy to follow her recipes. Also she makes very distinctive foods without a lot of esoteric, hard to find ingredients.
