  • I did something very similar last night in the crockpot, except that I didn't include the cream cheese. The chicken is very good shredded, and today for lunch I layered it with some of the stewed beans/chilies, some refried beans, some strained yogurt, and some salsa, scooped up with tortilla chips. It was a bit calorific…
  • I love almonds, but I definitely must put them pre-measured into baggies because it's way too easy to eat too many quickly.

  • Does a food processor work?
  • I'm just starting low-carb, struggling on my own. Would be glad to be your friend, although I don't know how helpful I'd be.
  • I'm eating my first one now, a savory one, and it tastes pretty good. I think this will be a frequent food in my low-carb repertoire. It is quite filling, but that's what I need right now because I'm about to leave for a garden party at which there will be a myriad of tempting foods, and hopefully this will help me stave…
  • Oh goody, here's a chance to use the detailed records that I compulsively collect (I enter data from grocery receipts into my personal finance computer program). I'm single, live in the DC area (very high prices), shop at Giant (which is more expensive than the discount grocery stores), and am not as disciplined as I could…
  • I just made this, it was quite tasty.
  • I started using MFP back in November, and was around 234 at the time. Since then I've varied, at one point had lost about 18 pounds but then gained back about ten of that. I feel like I keep gaining and losing the same 15-20 pounds, over and over. It's rough. I'm type-II diabetic, so that means that blood sugar has a huge…
  • Carbs. Since I'm Type-II diabetic, I should be eating very little of them, but I just can't do that. So I try to eat as much of them as possible in the "complex" format, meaning steel-cut oatmeal, brown rice, quinoa, bulgar, and beans (especially lentils and chickpeas). My brother has gone completely hard-core paleo, and…
  • I just finished a bottle of my own home-brew, a Black Ale. This is something that I absolutely would never be able to give up. The best I can do is control it. It's not even the worst dietary problem I have (need to control the carbs in general more, or at least eat only complex carbs). To my taste a well-crafted beer is…
  • I just made this "Black Forest", added 2 T of unsweetened cocoa powder and some frozen unsweetened cherries to the angel food mix. Too tasty!
  • I did the island cycling. Whew...first time I did the advanced one. I got SO lost.
  • I just made a similar one, added chopped ham. It's delicious and filling, and full of fiber.
  • Ratatouille is one of my favorites. I just made a big batch of it. I like that I can eat it cold or hot, as a side dish or a main dish, and it's easy to make, just basic ingredient.
  • I'm in. Determined to lose at least five this month, if not more.
  • I highly recommend the Richard Hittleman "28-day book", as mentioned earlier in the thread. It's a very old book (from the 60s) but has never been out of print because it's such a good book. Starts out extremely slowly, and progresses slowly. Great illustrations and instructions. I've started/re-started the program many…

  • I made this tonight. A lot of work, but it ended up tasting delicious. When I put the ingredients into the MFP recipe tool, it came out to slightly more than 300 calories a serving. Still, not bad. I think I undercooked the eggplant when I was broiling it, and I also didn't wash the salt off it well enough. I'm freezing…

  • On second thought, I also have a kettle (used rather frequently, mostly for tea), a waffle iron (not any more, too much carbs), and a kitchen scale which is very helpful.
  • I marinate in olive oil and white wine with some Pennzy's Poultry Spice mix. Then I bake in my little convection oven at 350, and finish it off with a few minutes of broiling. I should probably put some more effort into it, but I usually just want my chicken breast plain.
  • A plain rice cake with a smear of plain nonfat yogurt and a smear of sugar-free strawberry jam.
  • Some people make their food diaries 'public' in their Settings, that way everyone can read them. So, I will see someone's icon in a message post, and I'll click on that. If they've made their diary public, then I can View Diary.
  • I've gained two and two-and-a-half pounds within a couple of days of overindulging. Granted, those were days when I went at least 800 calories over my goal.
  • Would this freeze well? It looks really tempting, but I'm cooking for only one and when I make something that's more than four servings' worth (and time-consuming), I prefer that it's something I can freeze some of the portions.

  • My weight fluctuates a great deal, and I can see it on a graph because I weigh myself daily on a Wii Fit board. But, I am not beating myself up or giving up, because I am definitely seeing results over time. I'm also "falling off the wagon" for holidays, but then I just wait until the next day and start over again eating…
  • Logging your food consumption is a great thing, because you can actually see where your calories are coming from. The database here is an excellent one, very comprehensive. Once you figure out what your eating cycles and foods are, then you can start to make sensible substitutions. Find the foods that will keep you feeling…
  • Cheese and crackers. Specifically, Triscuits and goat cheese.
  • Unfortunately, quite a few people enjoy having an excuse to be vicious and hurtful. It's easy to forget the Golden Rule, that you shouldn't say something to someone else that you wouldn't want said to you.
  • I am inspired by your success.
  • I joined MFP about a month ago, per a friend's recommendation, and out of desperation. I'm a single 57-year old obese type-II diabetic woman, and have been in pretty bad shape for years since it takes time and energy and motivation to eat right and do the things necessary to lose weight. When I do cook for myself I make…
