I use a HRM when I'm on the elliptical, and when I have it on a medium level at a medium-fast pace, I burn around 300 calories in half an hour. I do weigh a lot more than you though, which I guess would also affect calorie burn.

I've never used a recipe with cups in, and always try to convert it to grams. I have scales so that I can get the exact measurement, I find it much more accurate than cups.

Maybe not in your stroganoff, but I've found that Butternut Squash makes a really creamy sauce for pasta or rice etc. It tastes really creamy when you blend it up :-)

I don't, but that's because I'm never sure how accurate my exercise calories are. The app I use reckons I burn over 1000 calories in my 90 minute workout, but I could never eat that much more food in a day. I tend to ignore my exercise calories, but not worry too much if I go slightly over.

I would say don't get disheartened. If you're serious about losing weight (and the fact that you have posted this means that you are), then you need to keep in mind that it won't be quick, and that even if it takes longer, it will stay off in the long run.
