I get my protein from legumes, tempeh, quinoa, seeds, nuts, vegetables, and a small amount of vegan protein powder. It's very easy to reach a healthy amount of protein in your diet if you're eating a variety of whole plant-based foods.

I use Pure Protein brand vanilla or cookies n' cream protein powder and mix it with unsweetened almond or coconut milk. I prefer it blended with ice, then you can add some natural PB in there. :)

If you want to weigh yourself daily, try to only do it in the morning. That way you haven't eaten in several hours so it will be more accurate (and usually a few pounds lower than later in the day, after you've eaten and had liquids).
