I am a late afternoon / after dinner snacker. One thing that helps me is that I have to do most of my workouts in the late afternoon after work, so that takes care of that time. But after dinner... still trying to figure that one out!

I would do an easy run of around 4 miles, or if you have a bike, go for a ride instead!

The lady in the lane next to me in the pool that has a giant cloud of perfume around her - so gross I can even taste it in the air! Or the guy in the lane next to me who tries to race me. He swims one lap as fast as he can, then has to rest for 5 minutes. Then he will start again as I am turning off the wall and "race" me…

There is a type of race called a duathlon ( run, bike, run). These are really fun, too! You could train for one of those if the swimming is an issue. Also, there are a lot of people that have learned to swim later in life, by taking some lessons and working on it! Go for it!
