I currently track carbs, fat, protein, sodium and sugar but I want to track fiber. MFP only lets you track 5 items online, which one would you replace? Cheese makes my eyes sweat!

Panicking about loose/hanging skin

So, just as everything is going wonderfully I've reached a point where my brain has decided to taunt me, "Yeah you're losing weight, very good, what use is slimming to a size 8 if you look like you've melted?" Am I losing too fast?
I have been following this plan for 9 days and I have lost 9lbs. I am 5ft6 and weighed 262lb when I started. I haven't exercised and have been eating 1380 cals a day which should mean I lose 2lb a week. Am I doing something wrong? I would hate to get ill or slip back because the weight is coming off so easily x
