What should I be tracking?

I currently track carbs, fat, protein, sodium and sugar but I want to track fiber. MFP only lets you track 5 items online, which one would you replace? I have an open diary, it's not the best looking in the world. I am open to criticism/opinion (bearing in mind I've lost 53lb in 5 months I don't think I am doing too bad!) Please feel free to have a look around and make suggestions. :drinker:
