Happy birthday!!! 50 is the new 30 and it's not old - I'm less than a year away myself... Anyway, pretty sure fasting makes you younger, or live longer or something!!

Peel them, boiled them, then make them slices and spray some avocado oil on them and a little apple vinegar

Boiled is great with nothing on them too (I don't like vinegar). They taste a little bit like sweet corn to me when boiled. I never knew I liked beets tell I had them boiled and not pickled.

Are they messy to cook with? Such as the color running everywhere..?

You can wrap in foil and bake, that is really good (my wife says it doesn't bleed out if wrapped properly) or you can put in a dish to boil so won't make a mess. We normally eat them baked rather than boiled. You don't lose any nutrients into the water that way.

I will try also bake them, usually I boil them

The are divine when they are baked. Don't even need to put them in foil if you don't want to. I did butternut squash and beets together the other day to put in a salad. So good!
