My meal today : giant pita sandwich with seitan, tomato, roasted zucchini, hummus, and garlic sauce. On the side, roasted asparagus, and scallion dill sautéed potatoes. 970 calories in total.

Yes, you do! :-) Best purchase I ever made were silicone baking sheets. They make unbelievable fries with no oil!

You should all be jealous, now! For a cool 1,000 calories, I've got seasoned fries (2 giant potatoes), 10 nuggets, 1/2 cup of mushy peas, and mayo and ketchup for dipping. Man, this hits the spot!

Thank you SO much, my peeps! I've never lost weight this "slowly", and I am THRILLED about it. When starting a new way of eating, I either lose nothing, or I lose 20lbs in the first couple weeks and then nothing after that. So a solid 7lbs loss is really encouraging to me! Like maybe it will keep coming!

I did not reach my weight goal, boo! But, it was my first month on OMAD, so I didn't know what to expect! I got 7 of the 14lbs. I'll take it! I did however eat all my leafy greens with every meal!

I make them different every time! Sometimes black beans, sometimes refried beans, sometimes faux ground meat, sometimes just veggies! Tonight was black beans, seitan chunks, sour cream, cheese, guac, lettuce, pico de gallo, cilantro lime rice, and a lot of love!

Dinner out at The Cheesecake Factory last night! I had (about a third of) a Vegan Cobb Salad, and (all of!) Korean fried cauliflower. It was sooooo delicious! I love Cheesecake Factory because they put the calories right on the menu! Super helpful. (No dessert for me!)

You definitely don't need them to get calories in. Believe me, it is not hard to meet your calorie and macro needs using whole plant-based foods! But if you struggle, then yes, just tossing your brussels sprouts in olive oil before roasting can add 110 calories! Eating 2 tbsp of peanut butter can get you 200 calories! Oil…
